Introduction

Great side dish with lots of flavor without a lot of calories! Great side dish with lots of flavor without a lot of calories!
Number of Servings: 10

Ingredients

    5 medium russet potatoes or 10 small red potatoes
    2 Tbsp margarine, divided
    6 cloves of garlic, crushed
    1/2 cup chicken broth
    2 teaspoons minced parsley
    ground black pepper to taste
    1 tablespoon prepared horseradish

Tips

We left the skins on, but you can remove if you'd like.


Directions

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and mash with butter and black pepper. Stir in broth, horseradish and parsley. Whip potatoes and place in medium serving bowl.

Garnish with additional parsley.

    To reduce the Carb Count I will reduce the potato content. In it's place substitute Kohlrabi, Rutabaga, or Daikon. For those lovers of Turnips they can also be used. However Turnips tend to make the consistency looser and wetter. - 10/18/20

    I made these potatoes and since I love garlic, I buy it in a jar so I added a little more than required and the horseradish really gave it a great taste. I also added 2 tbsp. of horseradish for more tang. This is much better & tastier than the ordinary garlic potatoes I am used to making. - 10/3/17

    Add garlic fine. Horseradish, never. I mash my potatoes in the water they cooked in. Saves the vitamins that cooked into the water and avoids the added calories from broth, milk or cream. - 7/16/17
