Number of Servings: 2

Ingredients

    2 Salmon fillets (4 oz each)
    2 oz Pistachio nuts
    3 tsp grey poupon

Directions

Chop nuts in mini food processor until small but not ground. Rub mustard over fish fillets and then roll in pistachio nuts. Spray pan with non stick spray and cook fillets for 3-4 minutes each side until done. Pistachios will darken and have a great flavor.
*Note this can be sauted in olive oil as well just be sure to add the extra calories and fat.

    I don't even like salmon but I thought I would give this a try since my husband loves salmon. Well to my surprise I loved this!!! It was my first time cooking fish and this was so easy to make! It also tasted really great! - 11/3/08

    This is FANTASTIC!!!!!! It was rich tasting and filling in a way that fish sometimes isn't. Even my fish-phobic fiance (try saying that three times fast) loved it! We served it with broccoli and orange wedges in FF creme fraiche. YUM!!!!! - 10/20/08

    I used this recipe on some inexpensive Hake fish (also lower in calories/per oz) and it turned out pretty good. I am looking forward to trying it on salmon. I didn't have any on-hand when I came across this recipe. - 10/25/12

    Incredible!
    I wanted a simple crusted salmon recipe and this was it! Definitely a keeper. Although not quite cooked through I placed the salmon in the oven for an additional 20 min at 350. DH was going to have leftovers until he saw me making this ... lol. - 12/2/10

    Very Good
    This was very nice- and simple to make. If you don't have a food processor, you can put the nuts on a flat tray with a lip and hit then with a heavy mug until crushed. - 11/17/09

    W/ the ingredients together, I wasn't really sure how it would turn out. I used my hand-crank nut chopper, and I don't think I got the pistachios fine enough. Plenty stuck, & we did like the way the nuts tasted darkened. Those that fell off went well with the couscous, spinach, and raisin side. - 1/10/09
