I know this will get the scoldings from the self appointed recipe police for adding calories, but cooking the fresh peppers, onions and garlic (2 Xs as much as called for) in tiny bit of evoo adds lots of flavor, then add beans, cliantro and tomatoe sauce with a splash of red wine vinegar - yummy - 8/19/08

Is it being too pushy to ask comments to be reserved until recipe is tried. Having to wade through comments about how good something sounds does not help anyone to evaluate whether or not to try the recipe. - 2/15/08

Great and so easy! However, 4 portions from a 3.5 servings can is not realistic. I served it with rice and it was ok for 2 people. The cheese on top was a very good idea. - 9/11/08

I have to disagree with Lizangelica! The first thing I do after I read a recipe is check the comments. They are very helpful. I think we all know what we will like and dislike, but I find it very interesting to hear how others may have changed the recipe--or if they loved it "as is." - 8/19/08

My husband thought these were great! We are mexican food lovers and also love a good bean side dish - this was excellent! I put about 1 tbsp of really finely chopped yellow peppers because I don't use green pepper flakes, but that was the only thing I changed... great dish! - 2/18/08

I made this twice, first i made it as directed and it was ok. The second time using fresh veggies and garlic and dices tomatoes in place of the tomato juice and red pepper flacks to spice it up. Very yummy! It is a good base recipe to adapt to your own taste. - 7/23/11

Good starter. I omitted the tomato juice, pepper flakes, & dried onion. I increased cilantro to 1/2 c, & added 1 mango, diced, 1 red onion, diced, 1 serrano chile, diced and 4 Tbl lime juice & pinch of salt. I served it all over brown rice. Hubby added salsa to his. Very yummy! Thanks! - 12/29/09

Black beans are my new friends. I was never really a bean person until the past few years. I really like black beans and am finding all kinds of ways to integrate them. But sometimes they are just good by themselves. - 2/15/08
