Introduction

Great on whole-wheat crackers or even toast. Great on whole-wheat crackers or even toast.

Ingredients

    2 garlic cloves, unpeeled1/2 teaspoon olive oil1 15-oz. can cannellini (white kidney) beans, rinsed and drained2 teaspoons lemon juiceSalt and ground black pepper, to taste2 tablespoons olive oil6 fresh sage leaves

Directions

Wrap garlic cloves, drizzled with 1/2 teaspoon olive oil, in aluminum foil and place in a 350 degree F. oven until garlic is soft, about 30 minutes. Cool and squeeze garlic from clove, discarding skin. Combine garlic paste, beans, lemon juice, salt, pepper and 2 tablespoons olive oil in food processor or blender. Process until smooth. Thinly slice or mince sage leaves; fold into tapanade. Taste to adjust seasonings, add salt or pepper as needed.

Makes 12 servings.

    Great alternative for hummus when I have no chick peas in the house. Having a husband with diabetes and high cholesterol, any proteins I can get from beans is great.I figure I can always change it up with different spices. At 12 servings/50 cals per if we split it we get 300 cals each for a meal. - 2/5/09

    I have done this with a variety of beans sometimes adding hot peppers or green onions chopped. I have done this with green peas for a mockamole. Think outside the box!!! Try cumin instead of the sage - 1/6/09

    I ditched the sage and used dill instead. Its a good meat replacement. If used used instead of meat have 3 servings at 150 cals and serve with veggies. - 5/1/08

    I don't even typically like beans (though I do love hummus), but this recipe was AWESOME!! I used 1/8 tsp ground sage instead of fresh and added some cumin. Delicious spread on a flour tortilla and rolled up with some cooked spinach and asparagus. YUM! Will make this a "must bring dip" for parties!! - 4/4/13

    We actually love to just spread the roasted garlic on crackers, pita, toast, etc. It's yummy all by itself and surprisingly, quite mild. - 1/31/09

    I really liked this! Left out the sage because I'm not a fan, and added more garlic because I am a fan of that. It looked less than appetizing at first, but when I put it in my mouth, wow did my mind change! Gets garlickier over night, so keep that in mind if you are not a fan. - 6/15/11

    I'm new to making this kind of thing. I used a sprig of basil, raw garlic - 2 cloves, 2 tsps of lemon juice and 2 tbsps olive oil. I ended up adding three more tsps of lemon juice (juice of half a lemon total) because I couldn't taste it at all, but other than that it was lovely. :-) - 2/10/11

    I'm afraid I wouldn't put the oven on for 30 minutes or so, to roast just 2 cloves of garlic.
    Now if it were 2 bulbs.... maybe.
    But it is certainly something I could do, when i get around to doing a packet of dried beans a day - soaking 1 day, cooking the next, then portioned into the freezer.

    Sounds like an ordinary White bean salad we make which is with whole beans, but I guess you can also smash the beans with a fork so you have more consistency and more to chew on.
    Follow the receipe with 2 cloves of garlic and not 2 heads like someone suggested.. and I would only use 2 sage leaves.

    the recipe calls for 2 "cloves" of garlic, but I think they mean 2 "heads" of garlic. 2 cloves (the individual segments) roasted would not have much garlic flavor. - 1/6/09

    Health wise it is quite a bit of oil, but alot of protein. I didn't care too much for the sage taste and it didn't compare with hummus. The roasted garlic was great (that was the first time for me to roast it. - 7/10/08

    Yes, it would work with chickpeas -- I've made something very similar. If the consistency is too thick, add a bit of lemon juice or reduced fat/reduced sodium chicken stock to taste when processing. - 7/10/08

    I make this with a few changes. I add more lemon juice and zest, less oil, raw garlic chopped fine and a few red pepper flakes to jazz up the flavor a bit. Any herb taste pretty good in it, I've used basil or rosemary. It's really good and good for you. - 12/28/07

    I plugged this into MasterCook and came up with 79 cal per serving, but that's still ok. Based on a 15 oz can of beans, one serving would be about 2 1/3 Tbsp. (7 tsp.). I haven't made this yet, but it sounds yummy, and I may try it for New Year's. - 12/28/07
