Introduction

Couscous is a staple of North African cuisine and can be found anywhere from Middle Eastern markets to your local supermarket in the pasta or dried beans aisle. Ingredients

    1 can (14- 1/2 ounce) fat-free vegetable broth1/4 cup water1 tablespoon dried minced onion1 teaspoon ground coriander1/2 teaspoon sweet paprika1/4 teaspoon each ground cinnamon and ground red (cayenne) pepper1/2 cup (2-1/2 ounce package) pine nuts1/4 cup each dried apricots and cranberries, chopped1 package (10 ounce) couscous (about 1-2/3 cups)2 tablespoons fresh parsley leaves, chopped

Directions

In medium saucepan, bring all ingredients except couscous and parsley to boil over high heat. Stir in couscous; remove from heat. Cover and let stand 5 minutes; stir in parsley.

Makes 8 (2/3 cup) servings.

    This was SO delicious; the only thing it needs is some moisture. I'm playing with variations of olive oil, spread, and some healthy sauces. I served it with a little lean pork. My hubby and I are going to make it for our 5th wedding anniversary garden party. It is easy, fast, and inexpensive. - 3/1/09

    I made this exactly according to the recipe except I chose Whole Wheat Couscous. Very Good. Couscous can be dry and kinda boring, but not this. Very tasty. Will make again for sure. - 2/27/09

    Made it using whole wheat organic couscous-family loved it. They prefer this over brown rice. Expected it to be spicy with the crushed red pepper but wasn't. Excellent! - 2/1/08

    I'm diabetic and this has some good carbs making it a good and flavorful side dish. I left out the cinnamon and pine nuts, but added frozen mixed veggies and garlic which I sauted together before adding it to the couscous mixture. Chopped chestnuts added crunch. - 1/21/08

    I added raisins instead of cranberries and used pecans instead of pinenuts. Absolutely adored this recipe and have shared it with family. I am a diabetic and always looking for flavorful, natural things and this recipe rocked my world. Served it with marinated chicken breasts. - 1/19/08

    I make something something very similar. I haven't used the apricots, but currants and tumeric are nice additions. There are many possible additions shredded carrots, poached chicken, black olives, etc. - 1/18/08

    I loved this but didn't put the pine nuts in. I'm counting calories and the pine nuts adds 385 calories, it's delicious without them. - 1/21/09

    Modified to use quinoa instead of couscous - whole grain and has a nice little 'bite' to it, texture wise. Used dried cherries instead of cranberries and forgot the parsley I'd bought especially for it (oh well) but it was delicious and a bit hit with my husband as well. - 7/22/08

    I'd like to try this, as it sounds really tasty. I will have to make one substitution, tho. DH has a nut allergy, so I will use sunflower seeds rather than pine nuts. It shouldn't alter the basic flavors that sound so good in this easy recipe. - 3/10/09

    this was an interesting take on coùscoùs.. very different from how im ùsed to cooking it (we live in Tùnisia, North Africa)

    Sounds like a great recipe, I love couscous. Since Cranberries and pinenuts are expensive here I will replace them wiht raisins and sunflowerseeds or pumpkinseeds. Am looking forward to trying it out - 8/3/08
