Ingredients

    4 catfish fillets
    2 tbsp paprika
    1 tbsp ground oregano
    1/2 tsp garlic salt
    1/2 tsp fresh ground pepper
    1/4 tsp ground cayenne pepper
    2 tsp extra virgin olive oil

Directions

Mix oil and all spices.
Pour over fish fillets.
Marinate in the refrigerator for 2-4 hours.
Grill to blackened perfection.

    blackened is a technique in high heat cooking.the item is only cooked for a few min.per side and it's the seasonings that get seared or blackened.It's not the same as burning a item till it's crusty and nasty.paprika blackens quickly and can get bitter so don't over cook the product...Chef Jim - 9/27/08

    I don't know what went wrong, but it was awful. Tasted like mud. Maybe bad fish? Cooked it wrong? I'll refrain from rating because I'm not entirely sure that the recipe was the problem. - 2/11/11

    Very Good
    Loved this recipe. It was my first time making blackened catfish, and I made it on the grill. Incredibly easy and fast. Like any recipe, you'll probably want to adjust the seasoning to taste, but this provides a superb starting point. - 8/9/10

    Is this blackened, as in, burned?? Isn't that bad for your health? Or maybe just the skin is blackened and you don't eat that part. Could someone clue me in? - 9/27/08
