Ingredients

    1 cooked chicken breast, chopped
    14 oz whole wheat penne pasta
    cherry tomatoes approx 2 cups
    1 cucumber, chopped
    1 red pepper, chopped
    1/2 red onion, chopped
    Kalamata olives (you choose the amt)
    1/2 cup olive oil
    1/2 cup lemon juice
    2 tsp dried basil (or Tbsp fresh)
    2 tsp dried oregano (or 2 Tbsp fresh)
    1/2 tsp salt
    1/2 tsp pepper
    4 oz feta cheese

Directions

Boil the pasta. Mix dressing ingredients. Add drained pasta, chicken, and remaining veggies. Just before serving add feta cheese

    O.K.
    I tried making this tonight for our 4th of July barbecue.
    When I put on the sauce, we tasted it and it was way too sour with the lemon juice. I ended up rinsing off the salad and saved it with a homemade Italian dressing I made. Other than the dressing, the salad was good.

    This was really delicious! I used 4 - 5oz chicken breasts though, so the breast in the menu must be a large double or something. You get 10 servings for the recipe, so I would guess that the servings are 1 cup. 1 cup servings are a good rule of thumb anyway. Thanks for the recipe! - 7/9/09

    Very good, simple recipe. I used Greek Yogurt instead of Feta Cheese, I mixed about 2 tsp. into the oil/lemon juice mixture. Yummy. Even the kids liked it! Will definitely make again. - 3/24/09

    I used gluten free penne pasta, added sliced red grapes and pine nuts, sprinkled w/Parmesan, and served over a bed of mixed leaf lettuce and spinach. Really good salad and a whole meal in itself! - 11/23/08
