Introduction

I adapted my fiance's recipe to use Splenda and a little vanilla...it's simply delicious! I adapted my fiance's recipe to use Splenda and a little vanilla...it's simply delicious!
Number of Servings: 3

Ingredients

    2 - medium Sweet Potatoes (aka yams) (raw) - about 2 cups
    1/3 cup - splenda (sucralose)
    1/8 tsp - vanilla
    1 tsp - cinnamon, ground
    1 cup water

Directions

Slice raw sweet potatoes into medium slim slices. Place slices into a small pot (large enough to hold the potatoes and water mixture).

Wisk together water, splenda, cinnamon, and vanilla, blend well. Pour over sliced sweet potatoes.

Cover and bring to a boil on medium heat. Once boiling, turn down to simmer, cook 30 - 35 minutes, until potatoes are soft - do not overcook, it will become too mushy.

ENJOY!!!!

    I cooked the sweet potatoes in the microwave. Then peeled and mashed with the rest of the ingredients and a little hot water. THe family loved them. - 1/6/09

    I made these yesterday for Sunday dinner and doubled the recipe. It was very yummy! I was out of Splenda, so I used Sweet N Low. The house smelled so good you just knew it would be delicious! Will definitely make again. Thanks for sharing! - 2/22/10

    I haven't tried this yet but may for Thanksgiving. Instead of Splenda I will use STEVIA, a natural no-sugar/no-calorie sweetner...it's the best! - 11/19/09

    Great! We used stevia, and nuked the potatoes. We could've done with slightly less sweetener, but it was great - tasted like sweet potato pie! - 12/25/12

    I wanted a recipe for mashed sweet potatoes, so I cubed the potatoes and boiled them in a potful of water. After draining, I added the splenda, cinnamon, and vanilla and mashed away. It needed a bit of liquid, so I tossed in some milk, as I would with mashed regular potatoes. It was wonderful! - 10/15/12

    I made these as mashed sweet potatoes. I doubled the recipe and baked 4 potatoes in the oven with my roast. Peeled and mashed them. Then I added the cinnamon and vanilla with 1/4 c. brown sugar and 2 Tbls. butter. They were delicious! Thanks for sharing. - 2/10/10

    I made this dish tonight without looking at this recipe. And i used splenda too. I use splenda in everything! The only thing i did differently was to add lemon juice to it, just a tad of water to cook it down. Once done,i added a little fat free cooking spray and fried them to eliminate the water - 6/18/09

    Since Splenda is made from sugar, then yes...however, it does not have the calories or carbs of sugar. You can also use aspartame or sucralose....I buy Altern, which is a knock-off of Splenda.
