Ingredients

    Whole Wheat Flour, 1.5 cup
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, .25 tsp
    Cinnamon, ground, 1 tbsp (
    Pumpkin Pie spice, 1 tbsp
    Ginger, ground, .5 tsp
    Pumpkin, canned, without salt, 1.8 cup
    Honey, 2 tbsp
    Splenda, 12 tsp
    Yogurt, plain, skim milk, .5 cup (8 fl oz)
    Applesauce, sweetened, .3 cup
    Egg, fresh, 1 large
    Egg white, 2 serving
    Instant, Quick, and Regular Oats Cereal, .2 cup, dry, yields

Directions

Preheat oven to 375 degrees. Mix all dry ingredients together except for the quick oats. Then, combine the rest of the ingredients (pumpkin, honey, yogurt, applesauce and eggs). Combine all ingredients. Pour into a 12-muffin pan. Top with a sprinkle of quick oats. Bake for about 23 minutes or until cooked thoroughly. These are sweet, moist and delicious!

    I would really like to make these but am confused by the measurements. How much is 1.8 cups of pumpkin and .2 cups of oats? The yogurt reads .5 (8 oz.). I have been cooking a long time and thought that .5 was 1/2 cup or 4 oz. What is .3 of applesauce? I am confused. Can someone please help? - 8/14/09

    These were yummy! I'm not usually a pumpkin fan, but decided to try anyway! I heard great things from my friends, as well. Also, I didn't have any normal sweetened applesauce, so I subbed Cinnamon Applesauce. They look just like the picture! BIG muffins for the amount of calories! :) - 7/6/09
