Introduction

This recipe is a healthy stand by for my husband and I. The slow cooker makes it really easy too, so I make this almost every week. I add other spices like oregano or substitute dried diced onion depending on the week. I hope you enjoy! This recipe is a healthy stand by for my husband and I. Ingredients

2 medium red bell peppers (they should be big enough to hold a cup of stuffing each)

1/4 cup uncooked instant brown rice, yields 1/2 cup cooked

8 ounces ground turkey, (about 1/2 a pound)

    2 tbsp diced onion

1 tbsp reduced fat sour cream

    1/4 cup tomato juice

    salt and pepper to taste

Directions

Cook instant rice according to package directions.

Meanwhile, cut off the top of the peppers 1 inch from the stem end, and remove the seeds.

In a bowl, combine turkey, sour cream, tomato juice, onions, salt and pepper.

When the rice is finished, drain it and run it under cool water for a few seconds, then add it to the turkey mixture.

Fill the peppers with the turkey mixture and stand them up in the slow cooker.

Cook for 4-6 hours on low, or 2-4 hours on high.

Makes 2 servings

*I usually prep this the night before and then start it on low before I head out the door to work at about 8, when I get home at 5:30 they are perfect, but it depends on your slow cooker*

Is the ground turkey cooked before it is stuffed, or does it cook in the pepper? - 1/25/11

    Incredible!
This was my first attempt at making stuffed peppers and it was great! I did not cook the turkey ahead of time and it cooked while in the crock pot. I did put them in the oven under the broiler for 5 minutes so they wouldn't be as soft. - 2/16/12

    Very Good
The filling is excellent. However, the peppers turned out too mushy for our taste when using the crock pot. We'll make these again, but bake them instead. - 4/10/11

    Incredible!
Something that we like every ingredient. I will have to use lean beef because of a turkey allergy. - 1/27/11
