Introduction

Number of Servings: 10

Ingredients

    2-14.5 oz cans of tomatoes whole or diced
    2- 14.5 oz cans of green beans
    1 large onion chopped
    1 large head of cabbage
    3 cloves of garlic minced
    4 celery stocks chopped
    5 large carrots chopped
    1 teaspoon garlic salt
    1/2 teaspoon black pepper
    1/2 teaspoon cumin
    1/2 teaspoon oregano
    6 cups water

Directions

Put everything in a big stock pot together. Spices are optional to taste. Bring to a boil and then simmer for about 3 hours. Add more water as needed if soup gets too thick.

Serve in soup bowls or drain liquid and serve as a vegetable dish. My family always liked it both ways. You don't have to tell anyone it is skinny soup...Just call it Cherie's Soup!

If you desire meat, you can add ham or bacon but I like it without meat. Nutrition Calculations are without meat.

    This is a great soup. You can add whatever veggies you have on hand and it tastes a little different each time, but always good. - 9/9/11

    Thanks for a delicious low cal recipe. Hit the spot on a cold chilly night. I added one link of Italian turkey sausage and used fresh vegetables instead of canned tomatoes/green beans. - 2/23/11

    Thank you. I am glad you like it. If you want to make it more tomato-y, you can add a low cal can of tomato sauce to it as part of the water.
