Introduction

Ingredients

Salmon Fillet
6 Baby Tomatoes (plum or cherry), halved
2 Spring Onions (scallions), sliced into 1cm pieces
1 Clove Garlic, sliced finely
1/2 tsp grated Lemon Zest
Juice of half a Lemon
1/2 tbsp Olive Oil
1/2 tbsp Fresh Flat Leaf Parley (chopped)
1 Bird Eye Chilli, sliced with seeds
Salt & Pepper to season
Tips
Perfect served with a green salad and balsamic dressing and some roasted baby new potatoes.
Directions
Makes 1 serving
1. Mix the tomatoes, spring onions, garlic, lemon zest, lemon juice, olive oil, parsley, chilli and salt & pepper in a bowl.
2. Place most of mixture onto a piece of tin foil before placing the salmon on top, making sure the juices don't run away by raising the tin foil to form the base of a parcel.
3. Spoon the remaining mixture on top of the salmon. Lift the long sides of the foil together and roll to close loosely above salmon. Take each end of the parcel and roll tin foil to seal each end.
4. Bake in the oven for 20-25 minutes.
5. Serve the salmon making sure to use all the tasty juices from the parcel. Green salad and baby new potatoes go perfectly.
