Introduction

This is a simple, quick, and healthy 1 pot recipe I threw together with what I had in the fridge. It is actually really tasty and I'm sure I'll make it again. Ingredients

    93/7 ground beef 12 oz
    Onions, raw, 1 cup, chopped
    red pepper, 1 cup, chopped
    1 large fresh tomato chopped
    *Pace Chunky Salsa - 1 cup
    Instant brown rice 2 cups cooked
    Season as desired (taco seasoning is good)

Directions

Cook rice and set aside. I use boil in bag. EASY! Cook ground beef. Season as desired. I used about a tablespoon of taco seasoning. Add onions and peppers. I put the tomatoes in after the onions and peppers had cooked for a few minutes. Saute until tender. Add salsa and rice. Cook together for a few minutes and enjoy. Makes 5 - 1 cup servings.

    This was a good, quick weeknight dinner. I added a little sour cream, shredded cheddar cheese, avocado and a corn tortilla. Delicious! My son couldn't get enough. Plus, there are more than enough leftovers to take for lunches during the week. - 5/21/13

    This was pretty good. I didn't have very much salsa or fresh tomatoes, but I had some tomato sauce and tomato paste that needed to get used and I added some corn and I used my "homemade" taco seasoning. My "picky" eaters ate two helpings. This is a keeper. - 3/31/11

    This was quite yummy! I used a full packet of taco seasoning and I only had half "regular" salsa so I used some peach salsa I had! Not bad! I served it with shredded 2% cheddar and lo fat sour cream. Will surely make this again!
