This protein-packed quiche is a fantastic main brunch dish--and it makes for delicious leftovers, too. Serve with fresh fruit and lightly dressed greens to round out the meal. Ingredients

    20 spears asparagus (pre-steamed)
    1/2 cup 1% milk
    4 large eggs
    3 egg whites
    4 oz cubed ham
    1 cup shredded mozzarella cheese (part-skim)
    Salt and Pepper to taste

Directions

Preheat oven to 350 degrees.

Spray a muffin pan with cooking spray.

Cut asparagus into 1"pieces and steam until tender.

Beat eggs, egg whites, and milk together. Add salt and pepper to taste.

Stir in cooked asparagus and ham cubes. Pour egg/asparagus mixture into pan and top with cheese.

Bake 20-30 minutes or until egg is set in the center.

Makes 12 servings.

    This is also good if you shape a piece of low cal bread into the muffin pan before pouring the egg mixture in. It adds an extra 50-60 calories but makes it a very portable breakfast or snack food. - 2/11/09

    Thanks very much for your comments. I wanted something quick for breakfast that I could just pop in the microwave at work, but feel like I was still eating real food. My mom and I are addicted to making them now. We have made 88 this week! different kinds of course!

    I made this and substituted the asapargus with spinach, and used turkey bacon instead of ham. I also added a few diced onions. I would make this again. - 2/18/09
