Introduction

Ingredients

    1 package (.25 oz) active dry yeast
    2 tbsp brown sugar
    1 1/8 tsp salt
    1 1/2 C. warm water
    4 C. all-purpose flour
    2 C. warm water
    2 tbsp baking soda
    2 tbsp melted butter
    1-2 tbsp coarse salt or preferred topping (optional)

Directions

In a large mixing bowl, add yeast, brown sugar and salt. Test water temp with thermometer. When 110 degrees, add to bowl. Stir well to dissolve. Add flour, stir well.

Knead dough on floured surface until smooth and elastic, about 8 minutes. Grease a large bowl and place dough inside, then flip it upside down to coat it entirely. Cover with a towel, put in a warm spot, and let rise for an hour.

Combine 2 cups warm water (110 d.) and baking soda in small pan. After dough has risen, divide into 12 pieces. Roll each piece into a rope about a foot and half long. Twist into whatever shape pleases you, dip into baking soda mixture. Place on cookie sheets and let rise 15-20 minutes.

Bake at 450 for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with topping.

    Being used to fresh, real German pretzels, these were actually quite good. I had trouble making the coarse salt stick to the pretzel, but these are good, easy to make and smell terrific when baking. - 2/3/09

    This is the same recipe as "Mall Pretzels" on allrecipes.com - a great recipe, but i'd be worried about calling someone else's recipe your own. - 7/15/08
