Low fat, low cal, high flavor & texture!

These are very chewy, kind of like soft granola bars, which to me is rather satisfying. They don't spread out much, so if you like your cookies flatter instead of plump, you'll want to press them down with your spoon or a spatula.

Ingredients

    No Sugar Added Apple Sauce, 1 cup
    White Flour, 1 cup
    Granulated Sugar, .25 cup
    Brown Sugar, .25 cup, packed
    Oats, 1 cup
    Raisins, .5 cup, packed
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, .5 tsp
    Baking Soda, 1 tsp
    Cloves, ground, .25 tsp
    Allspice, .25 tsp

Directions

Mix sugars, apple sauce, and spices in a medium size bowl. Stir in flour, soda, oats & raisins. I soak my raisins in hot tap water for 3-5 minutes, then drain before adding to plump them up a bit.

Bake at 350 for around 10 minutes.

Makes 2 dozen chewy cookies.

    Great base recipe for a healthy snack. Like most members, I had to tweak it a little. Used whole wheat flour, reduced sugar in half and used 1/4 cup raw only. Then added 1/2 cup chopped walnuts. Shaped into 12 cookies @ 135 calories each for a really great snack with a cup of coffee or tea. - 3/9/09
