I use a modification of this recipe, adding 3/4 cup water to the mixture. I use mini-muffin pans, and it makes 40-48 mini muffins (bake at 350 for 12-14"). My neighbor made these as a birthday giftie for me, and I LOVED them! My 9 yo daughter refuses to eat any kind of vegetable. She LOVES these - 5/1/11

I made the muffins yesterday and love them! I thought the batter was too thick so I added 1/2 cup of water and 1 egg white. Also to add more flavor I added 1 tsp of pumpkin spice and 4 drops of vanilla flavored stevia. The muffins came out super moist. - 9/27/10

For a few more calories, and a tiny more fat, I added half a bag of semi-sweet chunks to help curb my chocolate cravings. Delicious! - 7/1/09

These are really tasty muffins! I used the low sugar cake mix to drop calories even more. I did add about 1/2 cup of water, which made the batter more user friendly. Very moist, very tasty. Thanks! - 3/16/09

Do you mix the cake mix like normal then add the pumpkin or just add the pumpkin to the dry mix? I don't want to mess them up! - 5/29/09
