Ingredients

    1 medium onion, chopped
    1 1/2 cups (200 grams) red split lentils
    4 cups water
    3 teaspoons vegetable bouillon
    juice of one lemon

Directions

Rinse the lentils through a sifter, and pour into a pot , add the chopped onion(s) water, bouillon cubes and bring to a boil. Lower the heat and slowly simmer the soup for about 25 minutes or until the lentils are mushy and the soup has turned yellow.
Squeeze the lemon, add the lemon juice to the soup and taste it if you need more salt, perhaps add a bit of pepper etc. Otherwise it's ready to serve!

    This is a very nice recipe. However, you could try adding curcum and chopped onion saute instead of a bouillon for a richer more authentic Mediterranean taste. - 1/13/12

    Incredible!
    I made a variation of this from the back of the lentil package. It called for 1/2 t. cumin and 1/2 t. tumeric and twice the lentils and liquid (I used vegetable stock.) I like a creamier consistecy, so I blended a portion of it in the Vita-Mix. Excellent. I am assuming 1 c. servings. - 12/19/10

    I added carrots and some celery, as I am used to that. Used "The Zip" a salt free spice blend and it was really good! - 3/5/08
