Hungry Girls version of White Castle Onion Rings

These delicious, baked, oniony treats are a dead ringer (c'mon, what did you expect?) for the fast food version. Ok, we lied -- they're much better! Instead of sucking down a greasy, oily, caloriefest of a side dish, chew a few of these crispy & crunchy circles of love (er, onions), courtesy of HG. They couldn't be easier to prepare...or more delicious!

Ingredients

    Ingredients:

    1 large onion

    1/4 cup original Egg Beaters**

    1/2 cup crushed Fiber One

Directions

Preheat oven to 375 degrees. Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters. Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish. One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through. Serves one!

    For a little punch, use Frank's RedHot Original Cayenne Pepper Sauce instead of Egg Beaters, and a few light BBQ Pringles blended with Fiber One...Mmmmm - 1/12/10

    They were tasty BUT I had issues getting the Fiber One to stick. It's like after a few rings went through it would be "soggy" or "chunky" and then wouldn't stick to the onion. Any suggestions?!?!? I would love to try again! - 1/25/11

    I've made this twice now...the first time I had to agree that the fiber one coating was bland...so the second time I made them I added a splash of hot sauce to the egg beaters and put a dash of garlic powder/cayenne pepper in the fiber one batter...they tasted perfect. - 11/23/10

    I am a bit confused by the nutrition info. 103.5 cals or 153 cals? Also, full ingredient nutrition info says 1/4" slices, recipe says 1/2"? Either way I will still try this, but I will add some hot sauce, use egg whites, and try some spices-maybe garam masala for an Indian flare! - 9/21/10

    Very Good
    I loved this recipe it was a very good healthy twist on traditional onion rings. You also get to eat a lot of onion rings not just a few. It was great with a soy burger on the side yum! - 11/15/09
