Introduction

Found myself alone this weekend and decided to get a bit creative. Came up with this on a whim after looking through ingredients I had on hand. Easy to make, Easy to clean up and VERY yummy! I have enough to eat this for the next few days too since its only me and the filet was so big. Found myself alone this weekend and decided to get a bit creative. Ingredients

    1.5 to 2lb Atlantic Boneless Salmon Filet (thicker the better)
    1 Alaskan King Crag Leg, Cooked & Shelled.
    3oz of fat free cream cheese
    3 tblsp grated parmesan cheese
    3 tblsp progresso italian style breadcrumbs
    1 tsp dried dill
    1 lemon
    Garlic Salt
    Pepper
    1 packet hollidaise sauce mix



Directions

I used a big salmon filet, probably about 1.5-2 pounds. Costco sells some nice thick ones and I used about 1/2 of one of their big filets for this. Anyway, used a sharp knife to cut 1/2 way down the center, lengthwise, then butterfly it from the center and opened it up with the edges still attached.

Sprayed a glass baking dish with pam nonstick spray and put the fish in the pan. Preheat the oven to 400. Then make the stuffing.

I had one 1/2 pound alaskan king crab leg so I shelled it and pulled out all the meat making sure there were no shell pieces. Shredded it up and put it in a small saucepan on the stove. Added the following:

3oz of fat free cream cheese
3 tblsp grated parmesan cheese
3 tblsp progresso italian style breadcrumbs
1 tsp dried dill

Mixed it all together over medium low heat until the cheese was melty and everything was combined. Opened up the salmon and spread the mixture evenly down the middle, then folded the sides over the top as best I could. Shouldnt be able to close it all the way.

Sprinkle salmon with garlic salt, lawrys seasoning salt and a little bit of pepper, drizzle with 1/2 of a fresh squeezed lemon. Bake at 400 for about 20 minutes or until salmon is cooked through at the thickest part.

Meanwhile.... I made a lemon dill hollandaise sauce to go with it. 1 packet hollandaise sauce mix.. prepare as directed on package. When done, add 1 tsp dried dill and the juice from 1/2 a small lemon. Stir to combine.

I steamed some asparagus to go with it, which went great with the sauce too. Green beans would also be good :)

    Loved it! I used the individually frozen Salmon fillets from Costco, scooped some of the mixture, and folded it in half. I kept it closed with a couple of toothpicks, but it probably would have held without it. Will def. make again--so easy!!! - 5/4/10
