Number of Servings: 12

Ingredients

    1 large onion, chopped
    1 tbs extra light olive oil
    1 1/2 lbs lean ground beef
    1 cup frozen corn
    1 small can black olives sliced
    2 cans rotel tomatoes with green chilies
    1 can pinto beans
    2 packs taco seasoning
    2 1/2 cups of water
    1 pack dry ranch dressing(optional)

Directions

Place olive oil and onions in large pot and cook on medium until onions are tender. Place ground beef in and cook until it is browned thoroughly. Strain meat mixture after cooking to remove grease (to remove extra fat from it, run under hot water). Place meat mixture back in pot and add corn, olives tomatoes, water, taco seasoning (do not drain the beans). Let simmer for 25 minutes.
You can garnish with a little grated cheese or fat free sour cream. For Extra Flavor add a dry pack of ranch dressing.

    WoW! This was some seriously great soup! I used ground turkey instead of beef, and caned diced tomatos instead of rotel. It was GREAT! Even the bf loved it, and he hates everything healthy. Had the leftover with chips. Added some lite sour cream on top! YUM! - 11/16/09

    I've been making this soup/chili since 2001. I switched up a 40-30-30 recipe. I make my own taco seasoning to reduce the sodium, no ranch dressing (nothing packaged) or olives, black beans, minced garlic, LS chicken stock (depends on meat) instead of water, celery & fire-roasted tomatoes + Rotel. - 5/9/13

    Fantastic soup! We all loved it...including my two toddlers and my picky boyfriend. Loved it with the rotel tomatoes but we all love the spice. We ate it with light sour cream and a handful of tortilla chips. Yum!!! - 10/5/11

    This soup is delicious! I didn't have any black olives (nor enough regular taco seasoning), so I just left those out and added cheesy taco seasoning, hidden valley ranch dressing mix, and two drops of sriracha. Great recipe! This is definitely going in my favorite recipes. - 7/30/11

    Incredible! My wife thinks it is really spicy, I added jalapenos to my bowl, and Cilantro and fresh Garlic while cooking the meat and onions. It is a recipe that I will make agin it allows me to play with my food I like that. - 11/15/10

    This is very similar to a recipe I make often. I substitute turkey for beef and add a little more taco seasoning to make up for the lost meaty taste. I think the ranch mix is an absolute must, otherwise the soup tastes greasy. Very easy to make and certainly filling. - 11/10/10
