Introduction

This was adapted from several recipes I found here - with a few minor changes. This was SO easy to make and DELICIOUS. My version is a little spicy. It's surprisingly filling! Ingredients

    2 large boneless, skinless chicken breasts - cut into bite sized pieces
    1 box Stovetop Cornbread Stuffing
    2 cans Rotel chopped tomatoes with chiles, undrained
    1/2 tsp dry Oregano
    1 tsp chopped garlic
    1/2 cup hot water

Directions

Mix stuffing mix, 2 cans of Rotel tomatoes with juice, garlic, and 1/2 cup of hot water in a bowl until thoroughly mixed.
Place chicken in a single layer in the bottom of a 13x9 baking dish, sprinkle with oregeno and cheese. Top with the stuffing mixture.
Bake in a 400 degree oven for 30 minutes.

    Since my kids don't care for stuffing, I cooked some brown whole grain rice and placed that on the bottom with the chicken, Rotel and seasonings over the rice. I omitted the water since the Rotel is undrained. I have made it twice now and they like it. - 4/27/09

    This sounds AMAZING!!! I think I'm going to try it with the whole grain rice as i HATE stovetop stuffing..BLAH! But otherwise this just sounds soooo yummy!!!! :o) - 6/24/09

    I do not like Stovetop Stuffing. Yuck! Have you ever read the ingredient list? The taste is repulsive. (And I am a homemade stuffing lover). I do like Rotel cilantro and lime but too bad processed foods have so much sodium. Whole grain rice is so much healthier as mentioned by ConnieK1960. - 6/7/09
