My family loved this! It's my own low fat version of the chinese dish. I served it over rice and with frozen egg rolls. Kind of high in sugar....but low in fat. Hope you enjoy! My family loved this! Ingredients

    To make sauce:

    1 cup brown sugar
    2 TBSP Corn Starch
    1/2 TBSP Garlic Powder
    1TSP Ground Ginger
    1/2 C Apple Cider Vinegar
    1/3 C Pineapple Juice
    1/3 C Water
    2 TBSP Soy Sauce

    3 Boneless skinless chicken breasts cut into chunks

    2 Cups carrots sliced

    1 Green Pepper sliced and chunked

    1 can Pineapple chunks

Directions

Make sauce first by combining all dry ingredients then adding wet; microwave approx 5 minutes or until the sauce thickens.

In a seperate pan brown chicken and add carrots, green pepers, pineapple. Cook chicken through and tenderize carrots & green pepper. Add sweet & sour sauce. Serve over rice.

    Recipe is good but had to leave off the soy sauce due to the sodium content, if I can find a low (for real, low) sodium soy sauce it would be really good. Will make again.... - 4/21/09

    The only ingredient missing for us was the pineapple and the pineapple juice. I was able to put this together and serve in about a little over 2 hours. The sauce was outstanding. Great recipe! - 2/1/10

    Fantastic! I was skeptical because I love Chinese food and don't usually like how it comes out at home. But I didn't feel like I was missing out on anything! I was also concerned because the sauce smelled strongly of vinegar when I took it out of the microwave but it was great! I wouldn't change it! - 7/14/09

    I put the sauce ingredients with three frozen chicken breasts in the crock pot on high for 5 hours. Then I added veggies and pineapple and cooked while I made brown rice in the rice cooker. Shred the chicken and spoon all over rice! YUM! ALSO, reduced brown sugar to 1/2 cup...still sweet! - 5/3/09
