Introduction
This is a great summer dinner! The kids loves it - so a great way to get them to eat their veggies :) This is a great summer dinner! The kids loves it - so a great way to get them to eat their veggies :)Number of Servings: 16
Ingredients
-
1 - Pizza Crust (either prepared, or make yourself)
1 - 8 oz. brick cream cheese (1/3 less fat), softened
1 c. Hellman's Light Mayonnaise
* 1/2 package Hidden Valley Ranch Dressing (dry mix)
1/2 c. each: Carrots, Cauliflower & Broccoli
1/4 c. each: Mozzarella & Cheddar Cheese (shredded)
- Bake crust as directed (I bought an already made wheat crust and didn't have to bake). If you make your own, spread into a 9 x 13 pan for a rectangle pizza (much easier to eat this way!)
- Let it cool; Meanwhile, prepare cream cheese, mayo and ranch dressing together. Spread over cooled crust.
- Chop veggies (I put mine in a mini-chopper for fine pieces, but either way works)
- Cover pizza with vegetables and cheese, cut into 4 x 4 squares
*** Ranch dressing package was not added in as Spark did not have daily values. This does add to the sodium and calories by a minute amount.
*** Low fat or fat-free cheese can be substituted instead of regular cheese
*** Great topped with some Red Hot (if you like spicy stuff!)

My mothermade this using Pillsbury dinner roll dough (the kind in a refidgerated tube) She also made a fruit pizza using the sugar cookies from the refidgerated case. We loved them both, and although she has been gone for 4 years now, I think of her when I see certain recipes...like this one! - 8/5/11

I don't really like this recipe, I mean it tastes good but I do not get the nutritional information, how big are the servings, what kind of pizza crust was used, and the nutrition will vary with the crust you use...just something to think about before you make it. - 6/2/09

Serving size is shown by putting in a 9 x 13 pan and cutting into 4 rows x 4 columns (16 pieces) and is also shown at the end by 16 servings (1 piece being a serving).
As for the crust, the one I use (the 'make your own') gave this an accurate calorie count. However, premade can change calories
