Introduction

Delicious for breakfast or brunch, a crowd pleaser for all! Delicious for breakfast or brunch, a crowd pleaser for all!
Number of Servings: 8

Ingredients

    8 large eggs
    15 oz frozen shredded potatos
    1.5 cup fresh mushroom-sliced
    1.5 cup fresh tomatos-chopped
    1 cup green onion-chopped
    9 slices cooked ham lunchmeat -cut into one inch squares
    6 slices 2% american cheese singles
    1 tsp butter or margarine

Directions

Preheat oven to 350 degrees. Sautee mushrooms first in 1 tsp butter or margarine. Mix all ingredients together in a large bowl. Spray casserole dish with no- stick spray. Pour 1/2 mixture into a large casserole dish( 9x 13). Lay cheese slices over the top of first half. Pour remaining mixture over top of cheese. Bake for 45-50 min. ( test w/ knife or toothpic.) Cut into 8 squares and devour!!

    THIS WAS JUST WHAT I WAS LOOKING FOR TODAY TO HIT MY SPOT. BUT BECAUSE I'M ON LOW FAT AND LOW SODIUM I MODIFIED IT A BIT AND POSTED THE LOW FAT VERSION. SINCE THE LOW FAT CHEESE DOESN'T MELT AS WELL I MIXED IT INTO THE RECIPEL IT WAS FABULOUS!

    Great Dish-Very Easy. I cooked this in a Pampered Chef Bar Pan for 25 minutes and it came out perfect. We actually had it for dinner and it was filling and nutritious. Thanks for the recipe. - 5/13/09
