Introduction

1 serving = 1 medium sweet potato 1 serving = 1 medium sweet potato
Number of Servings: 1

Ingredients

    1 medium sweet potato (washed, dried and cut into bitesize chunks)
    2 tsp Olive Oil
    1 tsp dried Thyme (or to taste)
    1/2 tsp garlic powder (or to taste)
    Ground black pepper to taste

Directions

Preheat oven to 350

Wash and dry the potato (keeping the skins!)
Cut into bitesize chunks
In a bowl toss with olive oil to coat
In a zip top bag mix together the herbs (thyme, garlic powder & pepper)
Add the potatoes and shake
Spread the potatoes out on a baking sheet and bake at 350 for 20 - 30 minutes until fork tender and golden brown.

    A definate 'make-again' recipe. These were delicious! I think next time, though, I'll cut and spread the potatoes on a baking sheet then lightly spray them with EVOO and sprinkle the seasonings. I spent a lot of time cutting, tossing, and coating. - 2/8/10

    I love sweet potatoes cooked like this. My favourite combination is rosemary, salt and pepper. Sometimes I even turn them into mashed sweet potatoes after I roast them, with a bit of butter and milk. Yum! - 1/6/09

    I've never been a big fan of sweet potatoes, but the price was right in the store and they are packed with nutrients so I bought one. Cooking for one can be a challenge, but this should be perfect! I'll be making this tonight. - 11/5/08

    I have never been a fan of 'sweet' sweet potatoes. I dislike the cinnamon and nutmeg that so many people add to them.
    I personally think rosemary is better than thyme, and I also peel some of the skin off. I know there's nutrients in the skin, but I am not a huge fan of it or the added calories.
