Ingredients

    4 portabello mushroom caps, washed and stemmed
    1 10oz. package of frozen spinach, thawed
    garlic and shallots, diced (to taste)
    1/2 cup roasted red peppers, chopped
    1 package reduced fat feta cheese (3.5oz.)
    1 can diced tomatoes
    olive oil (for sauteing)

Directions

Makes 4 servings (1 mushroom per person)

Preheat oven to 400º.

Saute garlic and shallots for a few minutes.
Mix with spinach, peppers, and feta. Add salt and pepper to taste.

Empty contents of diced tomatoes into a baking dish that will fit the mushrooms. Lay the mushrooms in the dish, face up. Spoon spinach and cheese mixture on top and bake for about 25 minutes until mushrooms are tender.

    I have made this twice now and it was a hit every time! I used the basil seasoned tomatoes and mini portobello mushrooms. Only took about 10-15 minutes to cook. I also nixed the peppers. Awesome, thank you! - 2/14/08

    Very Good
    Instead of feta I am using ricotta and skim mozzorella. The calories are increased slightly, but the taste is awesome! - 4/14/09
