Introduction

Whether or not this is a "real" chicken curry, it's tasty and smells fantastic when you walk in to the house at the end of the day. I serve it with brown rice. Ingredients

    6 Skinless boneless chicken breasts
    1 can diced tomatoes
    1 medium onion, chopped
    4 cloves garlic, minced
    2 C water
    1 tbsp extra virgin olive oil
    1.5 tsp salt
    1.5 tsp pepper
    5 tsp curry powder (mild)

Directions

Cut the chicken into 1 inch pieces, trimming all fat in the process. Toss chicken with olive oil, salt and pepper and let sit for about 15 minutes.

Place chicken in the crock pot. Add tomatoes, water, onion, garlic and curry powder. Cook on low for 8 hours, then crack the lid and turn to high for 30 minutes to let the sauce thicken and reduce slightly

Makes 7 1-cup servings

    This was a super duper easy recipe!! I enjoyed the mild heat from the curry and the chicken was really tender. I will make this again with some slight changes. A little less curry powder, add a tiny bit of chili powder and instead of water and salt I'll add low sodium chicken stock. - 6/23/09

    This was a really good recipe. Fast and simple. I liked the heat from the curry powder, I added a tiny bit of chili pepper and I took the one persons advice and added mushrooms. It was awesome. The house smells good too!!! Five Stars. - 7/14/09

    It was easy and quick. The chicken had lots of flavor and my husband loved that I paired it with white rice (rarely is this offered). I added less curry than the recipe calls for and would serve it with plain yogurt on the side next time. Thanks for posting. - 7/13/09

    I added 1-1/2 cups of brown rice to the crock pot and bumped up the water to 4 cups and it was great. My kids even ate it. - 10/12/09

    I loved this recipe! The only thing I changed was that I added mushrooms, because, well, I love mushrooms. But all in all, it was great! I'll be making this again, for sure.

    Love this recipe. You can add heat if you like, as well as veg. We often mix it up and freeze as is, to throw in the slow cooker at a later date. Have to plan ahead for that, as it takes at least a day to thaw in the fridge before putting in the slow cooker. - 8/8/16

    I am anxious to try this, I love curry! I have often made the Eat, Shrink, and Be Merry "Better Butter Chicken" which is also delicious, this looks like a simplified version of the same. I usually add a can of chick peas as well, ups the fiber and protein! - 3/4/13

    This smelled SO good cooking away all day in my kitchen. I kind of over did it on the curry. Oops! I mistook tsp for tbsp when I was prepping.. thankfully I cut it back to 2 instead of 5! LOL I also added mushrooms and thickened it some with sour cream and a bit of corn starch to make it creamy. - 7/23/12

    Not as much flavor as I expected...but then again I used less salt (as I usually do) and upon the recommendations of other members, I also used less curry powder by 1 tsp. Next time will make as the recipe says and may also add red pepper flakes. Definitely good! Even my picky niece loved it! - 8/2/09
