Introduction

This colorful pasta will DEFINITELY satisfy your comfort food craving for Italian food. This colorful pasta will DEFINITELY satisfy your comfort food craving for Italian food.

Ingredients

    1/2 jar Classico Sundried Tomato Alfredo Sauce
    1 can (15 oz.) Hunts diced tomato
    2 small zucchini sliced
    1/4 medium onion sliced
    2 garlic cloves chopped
    2 tbsp. extra virgin olive oil
    2 cups cooked tri-colored fusili

Directions

Cook pasta according to directions.
Heat oil in large pan. Add onion, zucchini, and garlic. Saute til veggies are al dente. Add canned tomato, any seasonings you prefer, and 1/2 jar Sundried tomato Alfredo sauce. Heat through and allow to simmer to combine flavors.
Top cooked pasta with pasta sauce and add reduced fat parmesan cheese if desired!
1/2 cup pasta per serving.

    This recipe is simple. The next time I make it, I'm going to use fresh baby spinach to give it some zip and some fresh basil and oregano. Yummy! - 4/6/10

    This was a great recipe. I added a little Italian seasoning to the mix and it made the flavor even better! My 4 year old daughter who normally turns up her nose at anything new or healthy kept saying she LOVED this meal. Will definately add to my rotation! - 7/13/09

    Just finished making and eating. Added 2 cups cooked chicken and mushrooms. Quite easy and quick to make. Also spiced it up a bit with seasonings - will make again - 8/30/13

    I thought this was pretty good to satisfy a pasta craving, but hubby wasn't too crazy about it, as he is not an eggplant fan. I might experiment using regular pasta sauce rather than the creamy alfredo and maybe substituting mushroom for the eggplant, and consider some turkey sausage. - 11/3/10

    This recipe was really good! my boyfriend had a craving for italian food and this def. hit the spot while still managing to be relatively guilt free.     This was very good! I added a little chicken, some mushrooms and spinach with some extra Italian seasoning and put the leftovers in the freezer for later. Not sure how my 11 year old liked it.     I loved this! Yummy, yummy, yummy - it tasted so decadent but I knew it wasn't. I made a few small changes - I used more onion and chopped it and the zucchini instead of slicing; I only used 1 T of olive oil instead of 2; I used 2 oz of whole wheat spaghetti per serving instead of 1/2 c fusili. - 1/21/09

    Very good. Didn't have zucchini (fiance wouldn't eat it anyway). Added chopped green pepper, a fresh roma tomato, oregano, crushed red pepper and Mrs. Dash tomato/basil seasoning. Use more than 1/2 of the jar too because I LOVE that stuff! Turned out great and I will definitely save this recipe. - 3/21/08

    Wow! This tastes great!! It's also very easy to make. I used yellow squash as well as zucchini. I also substituted garlic powder for the garlic cloves. I think I'll add chicken next time because this is rather low in protein. - 11/2/07

    Everyone really enjoyed this dish. I sauted chopped fresh tomatoes and fresh mushrooms to go in and used vegie rotini pasta.I omitted the canned tomatoes and only had regular Alfredo sauce. Turned out colorful and tasty. We ate it hot w/ lo cal toasted garlic buns and salad.Adding chicken next time - 6/28/07
