Introduction

These are sooo tasty!


Number of Servings: 12

Ingredients

    3c shredded zucchini
    1/2c low fat shredded cheddar cheese
    3 tsp dried parsley
    1 large clove garlic,minced
    1 large egg
    1 cup Bisquick
    salt and pepper to taste

Directions

In a large mixing bowl combine all ingredients until mix thoroughly. If mixture is a little too dry add about a tablespoon of water.Spray cooking spray in a large nonstick skillet and heat over med.-high heat. Using a tablespoon drop spoonfuls of mixture into frying pan leaving about 1/2 in between them
The patties will seem very thick at first but as they cook they will flatten out a bit. When brown on one side flip and continue cooking until golden brown.
Makes approx. 12 patties

    Bisquick is a pre-made baking mix. To make at home combine with a pastry blender (or food processor)
    1 cup flour
    1 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1 tablespoon shortening

    The BEST Zucchini recipe!!!! I made 24 small ones instead of 12 bigger ones. Topped with a little red hot to add a kick to it! I did not have bisquick, so instead, I used 1 c. whole wheat flour, 1 and 1/2 t. baking powder and 1 t. salt instead...worked perfectly!!!!! - 7/20/10

    Going to try this tonight; steak on the grill, herb roasted potatoes (or mashed-hubby decides), and the zucchini patties. I love zucchini; he'll eat it if it is there. I try for variety so I can sneak good things into his diet.

    I love this recipe. I make it frequently when the squach is coming in, in the garden. I don't know about freezing them but I eat them as leftovers often. - 6/12/09

    Tasty and filling - my husband even liked them and he hates veggies!! I made a half recipe and only used the egg white and it worked well. I will make it again but I will add some additional spice - or serve with hot sauce. - 8/27/10

    Great idea cant get Bisquick so will use suggested substitute but use butter instead of shorning as that's unhealty. - 11/26/19

    We liked the overall mixture, just weren't crazy about the soft mushy inside. When I try it again I think I will add more seasoning for more taste and spread much thinner like hash browns instead of patties making more crunchy brown. - 5/11/15

    I made some of these with the cheese and some without. My hubby got the cheesy ones and loved them. The cheeseless ones are dry and bland and gluey, so I would recommend finding another recipe if you want something sans cheese. - 3/21/12

    I found the texture a little gluey. I am not sure if my zucchini was too moist or if that is the way they are supposed to be. I even tried re-cooking them to see if that helped. I might try sqeezing the moisture out before I mix them and give it another try. - 8/4/10

    Like the taste of these and they cook similarly to pancakes. However, I found it hard to get them crispy, which my husband would have liked. I like them fine, they're a lot like potato latkes. I like them a lot, but will try stronger seasonings next time. - 7/3/10

    My husband ate these up, but I don't think I made them right as they were very soggy and wet. I shredded the zucchini in a food processor and there might have been too much moisture in the zucchini. Not sure if I'll try them again, but hubby wants me to, so this gets at least 3.5 stars from me! - 7/4/09

    I love zucchini and this recipe was fabulous. I am a garlic fiend, so I actually grated two cloves of garlic into the batter instead of one and I used fresh parsley instead of dried. I will definitely make this again! - 6/19/09

    I actually used the exact recipe, 3 cups of zucchini. And used a regular silverware table spoon (not a measuring spoon). And I made 4 for lunch, and I have way more than 8 servings left. I think it makes a lot more. Which is good, because I can eat more :) They were AMAZING, just added chili powder. - 6/19/09

    This sounds great and we are a few days away from Zucchini in the garden. I will try it ASAP. Has anyone tried freezing these. Since I cook for 1, I am always looking for ways to freeze leftovers for another meal esp. after a long day at work. Please post if you froze some and at what point you did. - 6/12/09

    Was you asking about freezing the patties or the zucchini? I freeze both actually. I shred the zucchini and put it small freezer bags to use in the patties and bread.It freezes quite well as well as the patties.
