Introduction

Ingredients

    2 boneless, skinless chicken breasts
    16 oz jar of salsa
    4 oz can diced green chilis
    15 oz can black beans
    15 oz can sweet corn
    2 tbsp lime juice, or whatever you get from 1 lime

Directions

Put salsa, chicken and lime juice in the crockpot. Cook on high about 6 hours or low all day. Shred the meat with 2 forks (it will pull apart easily) and return to crockpot. Add the drained corn, rinsed blackbeans and diced green chilis. Cook another 1/2-1 hour on high until heated through. Serve with tortillas and toppings of your choice. Serves 6.

    THIS WAS WONDERFUL!!! We had it for dinner one night and then I warmed it up for lunch today. Fantastic! For lunch I spooned it over spinach leaves and topped with salsa and a bit of sour cream for a yummy salad. The flavor is great. Thank you for sharing this recipe. - 11/2/09

    This recipe is amazing! I added a can of chopped tomatoes with green chilis (and omitted just the can of chilis) and omitted the corn, but I am sure the corn would be good. It was great to put all these ingredients together in the crockpot and then go off to work. shred and mix and eat! Yum. - 11/5/11

    I want to make this but have a question: the recipe says 2 chicken breasts but the ingredient detail says 2 pounds (16 oz). Which is it supposed to be? Recipe sounds delicious! - 7/2/09

    Actually, 16 oz is 1 pound. I assumed each chicken breast averages about 8 oz., so just use 2 chicken breasts. Hope you like it!
