Mexican Chicken Casserole Mexican Chicken Casserole
Number of Servings: 10

Ingredients

    6 Small Chicken breast, cooked deboned ( save broth)
    1(8oz) pkg Fat Free Totillas Save one for top
    1 Medium onion chopped fine
    1 can Ro-Tel tomatoes
    1 c grated low fat cheddar cheese
    2 cans low fat cream of chicken soup
    1 tsp garlic powder
    1 tsp chili powder
    pepper to taste

Directions

Dip tortillas in broth for 5 minutes. Spray a 9 X 13 pan. Layer tortillas. Mix all ingredients, except cheese and tortillas. Pour mixture over tortillas and top with cheese and crumble tortillas. Bake at 350 for 30 to 35 minutes.

    This was awesome and the family finished it all in one night. Mine was not soggy at all because I only used 1 can of chicken soup and simmered it down. I also drained the tomatoes. I did not have any rotel, so I used a can of italian diced tomatoes and added cumin to it. - 9/2/09

    My family loved this dinner! One of my boys actually had 2 helpings.. that is very unusual at our house. I jsut need to tone down the spice so probably won't put as much chili powder in it. Kids said it was a keeper! - 1/18/09

    This sounds really good, but do you have to bake the tortilla for the top? It says to crumble.

    You can leave them off all together if you want. I use one that has been soaked in the broth and just tear them apart.

    I made this recipe exactly as specified, it was very runny. It had a wonderful flavor just to runny. Next time I make I will not soak tortillas (they fell apart) and drain the rotel and maybe even cut back on one of the cans of cream of chicken soup. - 3/15/09

    I didn't really like it, it was far too salty for me. Next time I'm going to try using no salt added tomatoes and a can of green chiles, maybe light sour cream instead of one of the cans of cream of chicken soup. My husband loved it though, so I'll be making it again, just modified. - 2/5/09

    This looks really good, but I could see myself going overboard on the chicken, SOOOO! how many ounces are there in "small" chicken breast? and while we are at it, how many licks does it take to get to the center of a tootsie pop! ;-)

    I made this last nite and my husband had 2 helpings. I halved the recipe and forgot to add the spices, but it still came out very well. I didn't understand the dipping of the tortilla for 5 minutes; i just dipped it once in the broth and layered it. Made a very nice bottom "crust." - 11/25/08

    This was a very easy recipe to make. I boiled the chicken breasts and then deboned and shredded them. I cooked 5 originally, but ended up using about 1/2 of the chicken. I froze the rest already shredded to use for something else. It was tasty! - 11/10/08
