Ingredients

    4 3 ounce salmon fillets (preferably wild Alaskan)
    salt and pepper to taste
    1 T butter
    1/4 c water
    1/2 c pure maple syrup (REAL maple syrup, not the fake stuff!)
    1/2 t olive oil (for the pan)

Directions

Heat a nonstick skillet over medium-high heat and use a paper towel to lightly grease it with olive oil. Pat salmon fillets dry, then salt and pepper both sides. When pan starts to smoke, place fish in pan skin side down. Don't move the fish to ensure a crisp skin.
Cook about 3 minutes, then flip and cook another 3-5 minutes, until fish is done to your likeness.
Remove from pan and let rest on a plate.
Mix maple syrup and water together. Add Scrape all the bits off the bottom of the pan, then add the maple syrup mixture. Allow to reduce slightly, stirring well. When the mixture has slightly thickened, add butter, swirl to mix and remove from heat.
