Ingredients

Shrimp, peeled and deveined - 2 pounds
Diced Onion - 4 cups
Diced Garlic - 6 cloves
Diced Green Bell Pepper - 2 cups
Diced Celery - 2 cups
Diced Green Onion or Scallions - 1 cup
Chopped Fresh Parsley - 1 cup
Bay Leaf - 2
Olive Oil - 1 Tbs
Creole Italian Seasoning - 1 Tbs
Pinch of Cayenne Pepper
Crushed Black Pepper to taste
Ragu Old World Traditional Sauce - 1 26 oz. jar
Petite Diced Tomatoes - 1 can
Farfalle Pasta, cooked to package directions, drained, not rinsed - 16 oz box
Shredded Part Skim Mozzarella Cheese - 2 cups or 8 oz.
Directions
Heat olive oil in cast iron skillet over medium heat. Add onion, bell pepper, garlic, celery and green onions/scallions. "Sweat" seasonings over medium heat for about 20 minutes, stirring often, until vegetables lose their moisture and begin to shrivel a bit and turn brown. Add Creole Italian Seasoning, Bay leaf, Crushed Black Pepper, and Cayenne Pepper. Add Petite Diced Tomatoes and Ragu. Lower heat and let simmer for about 45 minutes. Add shrimp and continue cooking at low heat for about five minutes, until shrimp turn pink. Turn heat off. Add cooked pasta and parsley. Toss well. Top with mozzarella cheese and place skillet under broiler until cheese is melted and browning. Remove Bay Leaf before serving.

I am so delighted that you enjoyed it!! My husband (CaptainCookie here on SP) is an executive chef and left the food services business after over 20 years to become a ship's captain. No matter his job, his food is GREAT! I will let him know that his recipe was enjoyed!!

My family loved it which is pretty amazing my daughter had a second helping. Originally was making this for a theme party but we didn't go and was testing this on my family to see if I would bring it. We froze the leftovers and will have another night. - 8/1/11
