Introduction
This simple, nutritious soup can be changed to your liking by making your own broth or switching the types of beans. I used green lentils, but red lentils, and garbanzos are great as well. Ingredients

Lentils-1cup
Sweet Potatos-3 potatoes, peeled & chopped
Onion-1 peeled & chopped
Garlic-2 cloves sliced or minced
Kale-2 bunches or 4 cups chopped (I like to break the leaves in bigger pieces)
Curry Powder-1 Tbsp or to taste
Low Sodium Vegetable Broth-6 cups
Olive Oil-2 Tbsp
Directions
Saute onion & garlic in a pot with olive oil. Add remaining ingredients except kale. Bring to a boil. Turn down to simmer for 15 minutes. Add kale. Simmer for another 15 minutes.
Tip:If you want sweet potatoes more firm than soft, add them after 10 minutes before you add the kale. The soft sweet potatoes add sweetness to the broth base of the soup. DELICIOUS!!

I thought this was fine with the amount of liquid that it called for, but I did add in an extra 2 cups because I wanted a looser soup. I also used different herbs (just red pepper flakes, cumin, sage, and a bit of lime juice) since I've been eating a lot of curry, but it was yummy and easy to make! - 2/2/12

I'm making this right now. However, I did make some changes. I used 12 cups of water and one bouillon cube...not sure how 6 cups of liquid could cover everything...it's packed with 12 cups. I only needed 1 T of olive oil for the onions and garlic(used 4 cloves, sliced). It's smells great so far! - 1/31/11
