Introduction

A healthy, whole grain twist to this traditional breakfast food. A healthy, whole grain twist to this traditional breakfast food.

Ingredients

    • 1 cup whole-wheat flour
    • 1/2 cup all-purpose flour
    • 2 tablespoons sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon salt
    • 1 1/2 - 2 cups skim milk
    • 1 egg white
    • 1 teaspoon oil

Directions

1. Mix all ingredients together in large bowl, stirring as little as possible while removing large bumps in mixture.



2. Pour 1/4 cup of batter onto hot griddle using a spoon or a ladle, and flip when bubbles appear and the bottom is lightly browned. Continue until batter is used up.



Makes 4 servings.

    The sodium is way too high; I've reduced the baking powder to 1 tsp and no baking soda or salt -- they don't end up so fluffy, but the savings in sodium are worth it. Also added an egg. - 6/25/08

    I put in chopped apples, strawberries, blueberries or banana, minimized salt, added cinnamon or nutmeg.
    Also have made up multiples of the dry mixture & kept in refrigerator bags, so I can make these more often with less prep time.

    The whole family liked them. I liked knowing they were eating something with fibre in it. I did cut down on the salt and only added 1/2 tsp. The keep you filled up all morning - especially when paired with fruit. I'll use this as my pancake recipe from now on. - 9/2/08

    I really liked these pancakes.. we had them for dinner with berries and eggs and bacon.. family leaves so early that I couldn't seem to get them made for breakfast.. they all liked them too.. thanks so much for the recipe! - 8/28/08

    These were really good. I made them with splenda and added vanilla. It ended up being 2 pancakes per serving and very filling. My kids liked them too. - 6/26/08

    The pancakes where dry and thick. I even added more milk. Like cardboard. I ended up dumping them. I like the oatmeal pancakes much better. - 4/22/12

    I only used 1 cup milk and 1/2 cap water and skipped the baking soda. We enjoyed ours with honey and fresh strawberries. I am making them again this weekend! - 10/7/11

    Really full of bulk. Enjoyed the consistency. Did put in the whole egg, cinnamon and vanilla. Blueberries to half and made 3 smaller pancakes instead of one large per serving. Pretty near perfect. Husband says keep the recipe! - 2/3/11

    I doubled the recipe & decreased the salt. I let the batter sit, while the griddle got hot. Terrific. An economical & easy way to give family a steady, energy burn till lunch time. Kids used lite syrup, me & hubby used low-sugar fruit spread-melted. Mmmm. - 6/26/09

    I made these pancakes for dinner tonight and thought they were great! I made the following changes: used Splenda instead of sugar; reduced baking soda to 1/8, used a whole egg; reduced salt to just a dash and added 1 teaspoon of cinnamon. Does anyone know how to re-calculate the calories & sodium? - 6/25/09

    Why add white, refined, unhealthy flour? Also, the sodium is way too much. It is not necessary at all. You can completely leave it out and it doesn't change the texture a bit. Also, use 100% whole wheat - either hard, white winter wheat or prairie gold. Much better for you this way. - 6/25/09

    Leave out the salt and add in some ground flax seed. we use a similar recipe with all whole wheat flour and no baking soda. If you double the recipe and beat the egg whites separately it will make fluffy waffles, too.

    They sound healthy!!! I founf wheat pancake mix. I made them and they came out wonderful...I guess that is a short cut using the mix. Especially adding fresh fruit and yogurt! Yummy! - 2/16/09
