Ingredients

    Spinach, frozen, .5 package (10 oz) yields
    Chicken Breast, no skin, 16 ounces
    "Butterball" Turkey Bacon (1 slice), 3 serving
    Goat Cheese, Soft, 3 oz
    Sun Dried Tomatoes, 3 piece
    1/2 cup mushrooms
    1 cup chopped onion

Directions

Preheat oven 350F
Cook the spinach per directions on the box.
Cut chicken breast horizontally, lengthways, to make a pocket. Do not cut right through!
Mix the cheese, spinach, tomatoes and bacon crumbles in a bowl.
Stuff mix into the pocket.
Close the chicken breast with a toothpick
Place in sprayed roasting dish and cook 40-50 min until cooked through.


Number of Servings: 6 - half of the chicken breast or 3 full breast, just calculate the difference.

    This was great! I used fresh baby spinach instead of frozen and sauted it with some garlic then added it to the mixture. My husband could not tell the difference in the turkey bacon and loved it! Even the kids liked it! - 10/13/09

    Incredible!
    I had to make this in a hurry due to having a teenager. I made it as an open face instead of stuffed, and it was incredible. This recipe will be in the monthly rotation. Never had goat cheese before good in recipe, not so good alone. - 3/14/18

    Very Good
    Loved the filling, but it was too dry. Next time I'll either make a mushroom/white wine sauce, spinach sauce, or roasted red pepper sauce. Great make-ahead. (Note to self--calculations are for 6 people---but 1 Prime chicken breast is 160 cal, & 75 cal for the goat cheese). - 1/30/12

    Very Good
    This chicken was great! I didn't add the bacon to avoid the extra calories and it still tasted great! I added the onions and mushrooms to the filling mix. It was a hit! - 1/8/10
