Introduction

Ingredients

    6 cups diced Potatoes
    1 cup raw Onion
    2 cloves Garlic crushed
    2 tbsp Olive Oil


Directions

Heat oil in nonstick skillet with a lid. Add garlic. Combine potato and onions before adding to the pan then add, stirring thoroughly. Cook covered. I check mine every 5 minutes to scrape the bottom of the pan as the potatoes brown and flip them. Makes 6 1-cup servings.

    This is one of our favorite dishes! I've been making this (almost identical recipe) for years - it's also good as a replacement for hash browns, in a pinch, I just leave the garlic out for that. - 4/26/07
