Introduction

This is EASY and quick. You are out the door for work in no time with dinner ready when you get home! This is EASY and quick. You are out the door for work in no time with dinner ready when you get home!
Number of Servings: 6

Ingredients

    2-16 oz. cans of sweet corn, drained
    1-16 oz. can black beans, rinsed and drained
    1-16 oz. jar of salsa (mild-hot, your preference)
    3 whole boneless, skinless chicken breasts
    1 cup low fat or fat free shredded cheddar cheese

Directions

Combine corn, black beans and 1/2 cup of salsa in the slow cooker.
Place chicken breasts on top.
Pour remaining salsa over the chicken.
Cover and cook 7-8 hours on low or 3-4 hours on high.
Sprinkle with cheese to serve.
Makes 6 nice size portions.
(The first time I made it it got dry so I didn't drain the corn the second time and it turned out just fine - depends on how hot your slow cooker gets on the low setting).

    I added a packet of enchilada mix and 1 cup brown rice an hour before it was done.....ate it with whole wheat tortilla, onions and cilantro.......my husband went insane! I put the rest in the freezer for more yummy meals later......very good - 3/19/08

    I saw this recipe on another website with one variation. 30 minutes before serving, throw in an 8 oz pkg oif reduced fat cream cheese instead of the shredded cheese. It's delicious. You can also shred the chicken and eat it as a dip with baked tortilla chips. Yum - 1/17/09

    VERY YUMMY! I served with some sour cream. I think the salsa you use makes the difference- choose the HEAT that you like. Canned foods are high in sodium so choose no salt added corn or use frozen! Also, fat free cheese is higher in sodium than low fat, so I always choose low fat! HAPPY EATING! - 12/10/07

    It was very bland as is. You need to add spices or it's just blah. We added cilantro, cumin, pepper, and garlic for spices. I also added an onion and stirred in a little bit of cooked brown rice. - 3/19/10

    DELICIOUS! I added some fresh vegetables (red onion, orange, yellow, red peper), about 1 tbsp of cilantro and chili powder, 1/2 cup vegetable stock (I like it juicy). I also cooked with rice. Put some Mexican cheese and fat-free sour cream in the end. Yum yum... - 1/31/10

    I used frozen corn,canned pinto beans,onion, chicken medallions from aldi and mushrooms.
    next time I will use hotter salsa, or rotel and maybe red kidney beans.This could also be made with ground or shredded beef...

    Good and easy recipe, but after I rinsed the beans to reduce the sodium it didn't have much flavor. I think that taco seasoning would have done the trick. I also used frozen corn instead of canned corn because it was what I had on hand. Did not add cheese, could have added flavor with cheese too. - 7/21/10

    Really good - the family devoured it!!! Made more than it called for - added chili & garlic powder and, fresh grnd. black pepper. I shredded the chix when done, an added sour cream. We ate it with tortilla chips, and a few drops of hot sauce - already have requests for an encore! - 1/25/10

    Just made this for dinner tonight. My husband and I really liked it. I shredded the chicken and cut up a couple of corn tortillas and baked them to have on the side. We also put a dollop of FF sour cream on top. It was like chicken nachos. I will definately make this again! - 12/7/09

    My husband and I liked it and would make again. It had alot of fiber which was a plus and we also added sour cream and a tortilla to complete the meal. I did change it a bit and only used 6 oz of Salsa 2 TBSP of hot taco sauce and added green onions to the dish. - 7/26/07

    This is fantastic!! Very flavorful & the chicken gets so tender it shreds beautifully. I didn't drain the corn and had a bit of soupy reserve, so you might want to drain one or just strain the liquid (as I did).     EXCELLENT!!! I always use medium salsa and the black beans I cook w/no salt. This was certainly not bland, but very tasty. Used chicken thighs as kids like them. Baked in oven less than 2 hrs. shredded chicken and added about 2 C. leftover rice at end. Will certainly make again!! - 6/12/12

    I made this today and it was GREAT!! I used the hot salsa and did not drain the corn. When I got home from work, I shredded the chicken then stirred and left it cooking. I then preheated the oven to 400 degrees and baked some corn tortillas for about 7 minutes. It was a very filling supper. Thanks!! - 4/17/12

    I added a tbsp each of powdered garlic and cumin, and a few tbsp of hot sauce (I love spicy food!). Also, instead of shredded cheese, I used low-fat cream cheese.
