Introduction

Stuffed green bell peppers from Mom's recipe..a great family meal! Stuffed green bell peppers from Mom's recipe..a great family meal!
Number of Servings: 6

Ingredients

    6 large green peppers
    1 lb ground turkey
    2 tbsp chopped onion
    1 cup cooked rice
    1 tsp salt
    1/8 tsp garlic salt
    1 can (15 oz) tomato sauce

Tips


Note: You can use ground beef instead of ground turkey, but the nutritional facts will be different--the facts posted are for turkey. I find they taste just as good with the turkey.


Directions

*Preheat oven to 350 F

*Cut thin slice from stem of each pepper; remove guts and rinse

*Cook peppers 5 minutes in enough boiling water to cover, drain

*Cook and stir onion and turkey in skillet until turkey is light brown; drain

*Stir in rice, salt, garlic salt, and 1 cup tomato sauce; heat though

*Stuff each pepper with turkey mixture; stand upright in greased 8x8x12 baking dish

*Pour remaining sauce over peppers

*Cover and bake 45 minutes

*Uncover, bake 15 minutes longer

    Delish! I didn't boil them either, used hunts spag sauce (garlic and herb) instead of tomato sauce, and used 2 onions instead of just 2 T. Also added a few garlic cloves. - 2/13/09

    I eliminated the salt, used brown rice and leftover taco meat. Halved the peppers and stuffed open face. Really fills up the plate. Didn't boil either. A little shredded low fat cheddar adds nice color. - 3/14/09

    want to do it easy... We call it unstuffed peppers... fry(for a better term meat, onions and other stuff. add brown rice, cut up peppers, onions, add crushed tomatoes, can or fresh, put lid on skillet and simmer til all tender, taste add spices, serve with a salad... a one dish wonder.... enjoy!!! - 8/8/09

    What a coincidence . . . I just cooked my own version of stuff peppers yesterday, only with veggies instead of meat. I used broccolli, onions, carrots, and grated cabbage, and I sprinkled mozzarella cheese on top. It was delicious. - 6/29/09

    I love these, thanks so much, they are in the oven right now! I too use brown rice and no boiling. I just heat them in the oven for a little while, I love them crunchy. I also add a little non-fat or low fat mozerella on the top. - 2/1/09

    I make this dish a lot. I don't cook the green peppers though. I like a little crunch! I use ground beef and rinse it after it is cooked to remove the fat. - 12/20/08

    This was pretty good, but the pepper came out mushy and completely fell apart the first time. The next time, I skipped the boiling step and it came out just right. The "stuffing" is pretty good but a little lacking in flavor, so you may want to play with the spices a bit to get it just right. - 11/6/08

    This was absolutely wonderful!!! I made it with ground turkey and didn't parboil the peppers. I also added some oregano and minced garlic. This is definately a keeper and will be making this on a regular basis. - 4/21/09

    Very simple to make...I put peppers in microwave instead for 10 min's (in dish with water) and I used fresh garlic instead of garlic salt...delish! My husband who is the world's pickiest eater enjoyed them as well! - 4/4/09

    These were really good! I used cut up veggie burgers instead of beef. It cut down the calories a lot. I also did not steam the peppers ~ I like the extra cruch. Will make again! - 4/3/09

    These were really good. I skipped the boiling part (just make sure that the sides of each peper are not touching each other or they won't cook) and used ground beef instead of turkey (because it is all I had). My hubby said the recipe is a keeper. Thanks! - 11/21/08

    Not exactly the way I've traditionally made these (usually add egg or egg white to uncooked meat and rice... stuff the peppers and top w/sauce) but I like this version (also minus the boiling). Thank you for sharing! - 1/7/09

    Imake stuffed pepper soften, you can omit the boiling time and just bake them accordingly. They will be soft yet not fall apart. - 11/13/08

    Very YUMMY! I used a mixture of brown and wild rice with fresh minced garlic. Also added a little bit of fresh corn kernels. My family loved it and were fighting over who gets to take the leftovers to work. :-) - 5/1/09

    Delicious! I made it with brown rice, though, and did not boil the peppers. They cooked very well with just the baking. Very simple to make! Will try with Red and Yellow and Green peppers next time. - 1/18/09

    I enjoyed this version with the turkey. I substituted the white rice and used brown. Once the meat was browned, I mixed the rest of the ingrediants and didn't reheat them. I didn't boil the peppers much and they weren't that mushy but next time I will delete the boiling part. Overall, very tasty. - 11/17/08

    typo alert: ingredients say ground turkey, instructions say beef. I might try a vegetarian version with meat substitute. - 11/2/08

    Oops. I just copy and pasted the instructions out of the old recipe that I had typed up. I used to make it with beef, then switched to turkey. Corrected now, thanks for pointing that out!

    This is really good! I par boil the 6 peppers for 10 min.in the microwave. I use a turkey/lean beef mix, brown rice, & add diced tomatoes as well as tomato sauce and lots of garlic. Cheese on top, of course. I package leftovers single & freeze for another day. It's hubby's favorite dinner! - 8/8/09

    These were very good. I thought they might be a little bland, so I added some steak seasoning to the browning turkey, and some Italian seasoning to the finished mixture and tomato sauce. My hubbie said he doesn't usually like stuffed peppers, but these were really good! A keeper! - 7/23/09

    Very good recipe. I did not boil the peppers. I used some Italian seasoning to add more flavor. I increased the rice amount and used some tomato paste to thicken the sauce. I know that I will use this recipe again. - 9/22/09

    This is the first time I cooked with ground turkey. I added 1 carrot diced, 1/4c onion & tbs garlic. I also used stewed mexican style tomatoes & diced them. I did boil the peppers for about 3 min. & baked for 25 min. Removed foil, added italian style diced tomatoes & baked uncovered for 15 min. YUM! - 8/29/09

    Yummy! I have never had a stuffed pepper before and these were delish!! I used brown rice and added a dash of cayenne pepper and a salt free seasoning. I will definitely make again! - 8/14/09

    After viewing others' suggestions, I substituted ground venison for the turkey, barley for the rice, and added mushrooms and a sprinkling of crushed red pepper. Definitely worth making again. - 8/12/09

    I also ditched the salt and garlic salt. Then I opted for 2 cloves of fresh garlic finely minced. I also ground up some leftover catfish; tilapia; and pollock & used the fish blend in place of the ground turkey. Also I added some Asiago cheese for added taste & some binding(not much). - 8/10/09

    I have now made these peppers a dozen timessterday. They were very very good. I use brown rice instead of white. I eliminated the salt & added more onion. I also have substituted the tomato sauce with SALSA!!!!!! - 8/10/09

    This turned out great! I followed some of the other reviewer's advice and didn't boil the peppers, and I'm glad I did. Really liked the "crunch". I also used "no salt added" tomato sauce and used brown rice. Right before serving, I added a tablespoon of sour cream to the top. Delicious!! - 8/9/09

    Hey, Everlasting...We must have the mom - I've been making these for years and they are delicious. Two hints: You can also cut the pepper in half lengthwise to make a smaller portions and they freeze very nicely. Thanks for the memories - 8/9/09

    I cut my peppers in half from stem to bottom-- and then put them in the oven to start cooking while I make everything else, then it all together and bake the extra 15 minutes. Have also just layered the filling and sauce over the frozen pepper strips in a baking dish "casserole style" - 5/28/21

    I leave out the rice, add a few breadcrumbs, eggs, and chopped onion, and use red, yellow and orange bell peppers. This totally fills my family up and is such an easy one-dish meal. They never even notice the meat is turkey. - 1/27/21

    Salt content too high for me. Since tomato sauce has salt in it, I left out the teaspoon of it. Also, used garlic powder instead of garlic salt. Was satisfied with results. - 1/27/21

    I enjoy stuffed peppers and whenever I use "meat" it's turkey. I elected not to boil the peppers as I prefer my veggies crispy and it keeps it standing up. I also use stewed or diced tomatoes. Sweet and simply. Love this - 1/27/21
