A quick and easy side dish for your meal. I put it together one day when all I had available was some frozen corn and the spices in my pantry. A quick and easy side dish for your meal. I put it together one day when all I had available was some frozen corn and the spices in my pantry.
Number of Servings: 4

Ingredients

    2 cups frozen corn kernels (do not thaw)
    1 tbsp butter (olive or vegetable oil would probably work too)
    1 tsp chili powder
    1 tsp ground cumin
    1 tsp garlic powder
    1 tsp salt
    1 tsp ground black pepper

    (The spices can be adjusted to your taste)

Directions

Melt butter in medium skillet over medium-high heat.

When butter is melted, stir all spices into melted butter.

Add frozen corn.

Stir corn to cover it in the melted butter and spices, and cook over medium-high heat, stirring occasionally, until all the water from the frozen corn evaporates. Continue to cook corn until it's hot, and begins to brown a little. (Total cooking time is approx. 10 minutes)

Serve.

Makes 4 1/2-cup servings.

    Perfect way to use up some fresh corn and feed a crowd. I used 11 cobs for 10 people. Didn't add much more spices as this crowd of folks aren't much for trying anything new and someone else said it was a bit spicy for their taste. All agreed it was very good! - 10/2/11

    Very tasty! I left out the salt and used only 1/2 tsp. black pepper. I thought the spices were still a bit too sharp, however. Next time I will cut back on the garlic and chili powder just a little. This would also be good with some pre-chopped onion and bell pepper added that I keep frozen. - 8/17/09
