Number of Servings: 1

Ingredients

    4 ounces boneless chicken breast
    pinch salt and pepper
    1 teaspoon vegetable oil
    1 ounce extra lean ham
    1 slice avocado
    1 slice fresh tomato
    1 ounce Monterey Jack Cheese

Tips

This recipe serves one, but go ahead and make a few more servings so you'll have leftovers.

Directions

Preheat oven to 450 degrees F. Wash and pat dry the chicken, remove any visible fat. Place chicken in a zip lock bag. Pound out the chicken to a 1/2 to 3/4 inch thickness. Season with salt and pepper. Heat saute pan then add oil. Saute chicken until browned on both sides. Remove chicken from the saute pan and place into an oven safe baking dish. Sear ham in the hot pan just until browned. Place ham on top of the chicken. Continue to layer with the tomato, avocado and then cheese. Bake until chicken reaches 165 degrees F and cheese is bubbly. Serve warm.

TIP: Try adding the avocado after the chicken is baked and serve it as a garnish.

We tried this for dinner this evening. Instead of Avocado, we added Asparagus. My husband is not a fan of asparagus, and I had never tried it until this meal. OUTCOME: WE LOVED IT! This was a very EASY and TASTEY meal! Will definitely make it again!! - 3/24/10

Made this even skinnier by pounding the chicken super thin and wrapping all the ingredients inside, then omitting the oil and baking the whole thing so that they were chicken filled pockets of GOOD! Very yummy and easy transporting for complete lunches! - 4/18/11

Made this tonight. Everyone loved it. Ended up baking the chicken about 20 minutes. Think next time I will wait till 10 mins left on time to add the cheese and tomato. Added avocado afterwards. But all and all delicious! - 1/6/10

This was very good. Even my kids loved it. I lightly breaded the chicken. I also cooked it with the ham for 15 minutes then added the tomato, avacado and cheese. Then I broiled until it was browned and bubbly on the top. Delish! - 2/28/10

Oh, this is heavenly! I wouldn't mind having this 3-4 times a week. My autistic daughter wouldn't eat fresh fruits, except if it's mixed with delicious meals like this and I blend the avocado with a half a cup of her favorite yogurt. - 5/5/10

I appreciate the simplicity. Not sure what a "slice" of avocado is. But I wonder if there is any relationship between the recipe and the photograph? - 5/22/13

I never make the recipes on here if a picture of one thing is show that does not look anything like the recipe. I would rather have no picture that this very blatant deception - 5/22/14

This was very good. I usually make Cordon Bleu w/ ham, mushrooms & Swiss, but this was a nice change. I also rolled it all up inside the chicken and baked the whole thing for 40 mins at 350d. Just a note, the nutritional breakdown doesn't include the calories for the avocado or the ham. - 5/22/13

Just made this tonight for dinner...super easy & very tasty. It was incredibly moist, too! I used natural deli ham, since it was thinly sliced, used salt-free seasoning blend, and saved the avocado for a garnish. Served it with pasta and salad. DELISH. Thank you - will be making again :) - 1/11/11

This is our new favorite!! Very easy and quick. I put the tomato and cheese on after 10 min. of baking then baked 10 min. more. The avacado went on after it was done, so that it didn't get mushy. Yum!! - 1/8/11

It was good; however, the next time I make it, I will add more seasoning as it was a little bland, and I accidentally overcooked it because I didn't realize how fast it would cook - it was done after 15 minutes in the oven. - 1/4/11

Super tastey!!! I cut the calories a bit by using 2% cheese and instead of sauteeing in 1 T of Vegetable Oil, I subsituted 1 tsp of oil for flavor and 2 tsps of chicken stock instead. Oh, and thank you for the suggestions on using asparagus! Delicious! - 1/4/11
