Ingredients

    1 T olive oil
    2 lbs (32 oz) chicken breasts, boneless and skinless, diced into 1-inch cubes
    1 onion, diced
    3 cloves garlic, grated
    1 t salt
    1 t ground cumin
    1/2 t chili powder
    1/8 t cloves, ground
    1/8 t cayenne pepper
    4 (15.5 oz cans) cannellini (white kidney) beans, drained and rinsed
    28 oz chicken stock, low sodium
    2 c corn, frozen
    2 (4 oz cans) green chilis
    1 lime
    3/4 c low fat, shredded monterey jack cheese


Directions

Heat oil in a heavy saucepan over medium heat. Add chicken and onion. Cook until chicken is no longer pink, about 5-7 minutes. Add garlic cloves and spices, continue to cook for 1-2 minutes. Add beans and stock. Stir and simmer for 25 minutes. Add corn and green chilis , continue to simmer for 5 minutes. Remove from heat and squeeze lime into chili. Serve with 1 tablespoon of cheese per cup of soup.
If you prefer a thicker chili, puree 1/4 of the soup before you add the corn.

    omg this was delicious! i will make it again. it was a cold day first snow and my husband was very greatful for this. he ate his with french bread. mine with one square of cornbread. yummy. i didnt change a thing. after all she is the chef. - 10/12/09

    Excellent recipe, but not thick enough...so I pureed ~2 of the 4 cans of beans with some of the broth to get some needed thickness. I substituted jalapenoes for green chilies (all that had) and doubled the cumin, cayenne, and chili powder. I omitted the cloves. Yummy! - 1/3/10

    Amazing! I added bell pepper with the onions and doubled the spices (except the salt). I followed the suggestion to puree 1/4 of it to get a thicker consistency. It made a huge amount - great for leftovers and it freezes well. I served it with pita chips the first night and cornbread after that. - 10/16/09

    This was a very tasty chicken chili. I made the recipe according to the directions. I found the chili a little bland, so I doubled the spices and garlic. This gave it a nice little kick and just the right seasoning. Easy and delicious and healthy to boot! - 2/2/10

    This was very good! I used ground turkey instead of chicken, and I added a can of tomatoes. I was a little afraid of the cloves, but I put them in anyway. The spices were really good, and the lime makes all the difference! I will definitely be making this again! - 1/19/10

    This was wonderful! It was thick enough for me so I didn't puree it. I did add one frozen pack of spinach and I think it helped thicken it up a bit. I didn't see where it said how much a serving size was, so I guessed that it was a 1 cup??? - 1/28/10

    This was a great soup to make for our first fall like weather in Florida. I did not add the cayenne pepper, I must admit I am a baby for hot spicies. I did thicken the soup and loved it. I found I like green chilis. New item for me to try in other receipes. I will be making this alot. Thanks:) - 10/21/09

    At my sister's suggestion I cut the recipe in half for just me and added Green Taco sauce or salsa the kind w/ tomatillos - 4 oz for half the recipe - it is even better after it sits. This is great. (I didn't add any salt - just a little when I served it.) - 2/17/10

    Added one can of chicken broth(instead of 2), ond can of no salt corn(instead of frozen), have bottled chopped garlic always on hand in the frig so a tablespoon of that and bottled jalepenos about 1/4 of a cup for color and heat.
    The guys loved it!

    Very good and filling. I used white northern beans instead. Using the kroger private select organic cans of beans resulted in a bit less sodium. I added 3 T reduced-fat sour cream on top of each serving - Yum. Next time, I'll add something to add a bit more heat to it - a little more cumin (?) - 1/17/10

    Husband and daughter loved it, i made it with vegetable broth and i added Mrs Dash and some poultry seasoning. I used 2 cans of cannelloni beans and 2 cans of the red kidney beans for color. I topped it with cheese, tomatoes, and celery.next time i will use the crock pot with the dried beans - 1/2/10

    Hubby doesn't like spicy foods but he gave this an 8 out of 10 and said he would eat it again. It seemed to make only 8 cups which to my way of thinking is 8 servings and 339 calories per serving. - 2/16/10

    I made this in a slow cooker and I wonder if that made a difference because it wasn't as spicy as I hoped. We enjoyed it, however. Very low calorie since using the slow cooker eliminated the olive oil. - 1/29/10

    Did mine in the crock pot - cooked the chicken and onion and then dumped everything (but the corn and cheese) in and let it cook. I got different calorie / carb ratings when I input the recipe... not sure why. - 1/26/10

    First time to try this reciepe and it turned out TERRIFIC! I did omit the cloves as I don't care for them. The pureeing worked like a charm. I did use some blue tortillia chips as a side. Next time I make it, I plan to omit the corn and see how I like it that way. - 1/9/10

    I love the basis and the basics of this recipe, just would like to use the UNcanned version of the beans and chilis for reduced sodium. I make my own chicken broth by just poaching a whole chicken and using the meats off the bones. I am also using fresh corn off the cob seeing it is farmers market - 7/14/10

    I really liked this recipe. I added a chopped red pepper when I added the garlic. I also added a can of chopped fire roasted tomatoes. When I added the lime juice, I added some fresh chopped cilantro. I did not use the cloves. I would definitely use this recipe again - 3/16/10

    I love this recipe, it is very similar to one I have been using for years and I was so happy to see it and be able to see the nutritional values. If I have a lot of time I use dried beans and cook them. I also use a mix of jalapenos/green chilis to add a little more heat. Thank you! - 1/19/10

    Delicious but, a bit bland to my seasoned taste buds. I had to add 1 tsp of ground cumin, 1/2 tsp of cayanne, a sprinkle of dry basil, 1 tbsp of fresh parsley and 1 stalk of scallion, chopped fine to 1/2 the recipe prepared, for flavor. If I did not have to add any more flovoring, would rate 5 star - 12/30/09

    I made this yesterday w/ blk beans,frz.wht corn. brwn rice, jar of chipolte lime salsa, seared ch breast w/mrs dash seasong. mixed all ingredients in lge bowl while chk is browing. Add chk to crockpot/slower cooker and pour remaing. ingred on top and cook on high 4-5 hrs. srv w/taco & LT sour cream. - 12/30/09

    This is similar to a Bon Appetit recipe that I've made. It uses turkey sausage instead of chicken, and garbanzo beans in addition to the white beans. It is one of my favorite recipes! - 7/14/10

    Simmering on the stove right now! I used fresh Pasilla Chiles, and a bunch of fresh cilantro, no cloves (didn't have any) and used more of all other spices and just 16 oz of broth...smelling amazing! Will serve with rice and sliced avocado! - 5/25/10

    This is going to be a regular in our family from here on out... Sooo flavorful and delicious! I added a little avocado and some nonfat greek yogurt (sour cream would work too) on top and that made it over the top good. I will be making this again soon. - 5/22/10
