Introduction

A lovely little cheesecake type desert (or breakfast!) Low in carbs and calorie friendly, too when you just need a little something sweet. Also freezes well so you can take out one or two at a time, but store the rest. A lovely little cheesecake type desert (or breakfast!) Number of Servings: 12

Ingredients

    2 8 oz packages Cream Cheese
    1/2 cup Splenda
    2 eggs
    1 tsp vanilla
    1 TBP cinnamon

Directions

Preheat oven to 350

Soften cream cheese (can use microwave - or leave on counter for a while ahead of time)

Add all ingredients together and mix well. Pour into 12 muffin cups (fill about halfway) and bake for 20 minutes. (If you want them to "look" nicer - I.e. no cracks on top, you can use a water bath for a slightly longer period of time)

Let cool and enjoy! Store in refigerator or freezer.

    So yummy! Definitely helped with the craving for cheesecake. I added a nut crust (1 cup crushed pecans, a little melted butter and 1 packet of Splenda, bake on 375 for 10 min)...and also added a TBS of sugar free Strawberry Preserves for a topping. Mmmmm.... Love love!! - 4/5/10

    This recipe is delicious! I substituted the Cream Cheese for Neufchatel Cheese (which tastes just like Cream Cheese but has fewer calories) and added 1/2 TBSP of All-Spice and 1/2 TBSP Cinnamon instead of a full TBSP of Cinnamon. Mmmm! - 1/23/10

    These are great! So many different ways to make these, I added more cinnamon and cocoa powder. Next time I think I'll try savory ones by not adding the splenda, vanilla or cinnamon and mixing in cheddar cheese and sauteed onions. - 5/5/11

    How can a serving have 1.5 carbs when 1ounce of fat free creem cheese has 2 carbs. This would have well over 1.5 total carbs. Lack of correct nutritional information is discouraging - 1/5/13

    Ive made these twice now, only half a recipe bc I'm the only one that will eat them, and theyre mushy and almost like theyre not cooked through. I only used 1/8c of Stevia this last time bc I thought they were too sweet the first time. - 7/30/12

    I thought these were excellent! I used a little bit of almond meal with some butter and a little bit of butter as a "crust," which turned out well. I also used 6 TBSP cool whip, which resulted in an extra 2 muffins and a fluffier texture-also pumpkin pie spice instead of just cinnamon. Very good! - 5/24/12

    This cheesecake was awesome! I did not change the basic cheesecake. I only added a crust made out of 3/4 cup almond flour, 2 tbs truvia, and 2 tbs melted butter. I pressed the crust into the bottom of each muffin cup and baked for 12 minutes or until slightly browned. Then added the filling. - 5/23/12

    did anyone else have a problem with them not getting hard? I baked them for 20 mins at 350 degrees and the cheese is still mushy...any help? My cream cheese is quite expensive and I really want to eat these. - 10/7/11

    I really like this recipe. After I put the mixture into the tins, I used a spoon to push it down and make it smooth across the top and I didn't have any splitting on the tops. They taste better when chilled. I will probably use less cinnamon next time. Thanks! - 9/4/11

    I eat a lower carb diet so I especially appreciated this recipe. The cinnamon gave this a cream cheese danish kind of taste so I think I will enjoy this as a breakfast treat. The recipe was easy to half and I liked that it did not use fat free or low fat cream cheese. - 1/14/10
