Number of Servings: 6

Ingredients

    1 lb beef stew meat in chunks
    1 can stewed tomatoes ( I use Italian Style)
    half an onion in wedges
    3 stalks celery in chunks
    1 potato in chunks ( peeled or not)
    3 cups water
    salt pepper herbs etc. to taste
    1/4 cup flour
    1/2 cup water

Directions

Combine beef, tomatoes, celery, onion, and potatos. ( you could also throw in carrots, corn etc.) add 3 cups water, salt, pepper.
let cook until tender...time depends on your crock pot, mine cooks it in about 4 hours on high.

add 1/4 cup flour to 1/2 cup COLD water, mix.
add flour and water to the simmering liquid, stir well. let thicken. add more salt or pepper if necessery.
makes about 6-7 one or so cup servings.

Really great with cornbread!

    This was my first attempt at beef stew and I was very happy with the outcome! I skipped the celery and added carrots, corn, and green beans, and used about 5 red potatoes. I only had a can of whole tomatoes so I cut them up a bit. Very versatile recipe. Thanks for sharing! - 12/29/08

    I was amazed at how much flavor there was, given this is a very simple recipe!
    I did brown the stew meat before putting in the crock pot, I am not sure if that makes a difference or not, but either way- this was A HUGE HIT!!

    Hey, I just wanted to let everybody know that the picture doesn´t do this dish justice.....I just made it and I took a picture, the one on the blue plate, and it looks much better than the picture, it has more tomato than it seems to in the picture and the thyme and rosemary gave it a great taste. - 12/12/11

    I made this tonight and used sweet potatoes instead of white because I was out of white. I was really surprised at how much I liked it. I may leave the celery out next time though. - 2/13/08

    I used i 15 oz can of diced tomatoes undrained instead of stewed tomatoes and I added corn and carrots to the recipe and I never use salt but i used garlic powder. VERY yuuuuuuuummmmmmmy!! - 12/6/07

    Wow! I really liked this, my kids and picky husband did as well. I did have to cut up the tomatoes a bit before i added them- i just used kitchen shears to snip them up while still in the can. GREAT flavor! thanks for the recipe!!! - 9/14/07

    Great recipe! I would have used beef stock instead of water but didn't have any so I used a can of healthy beef barley soup with a can of water. Added fresh garlic and tons of veggies including kale, poblano peppers, and red pepper along with recommended veggies. Deserves 5 stars! - 2/10/14

    We made this tonight and it was yummy and very nice on a cold, fall day. It makes a lot. It's easily 6-7 servings...if not more. We took 1-cup servings and had it with biscuits. We added a can of corn to the mix. Yum! - 10/30/12

    I made this and I used my left overs from a pot roast that I usually end up tossing. I know it was a hit because I didn't have any left in the pot. I didn't have to cook it as long because everything was already pre cooked.

    This was great! I made a few tweaks: I added 2c. frozen peas and 1 c. frozen corn, I used no salt added beef broth instead of water, and I added 1 cup of pearled barley in the last hour of cooking. The barley was a great addition, as it thickened up the sauce even more and added a whole grain! - 2/28/11

    Ok, I had to add a jar of salsa to get flavor.... my crock pot took 7 1/2 hours to get the carrots and potatoes soft. I'm sure it's just my crockpot though. Overall, I'd make it again but I'd start much earlier. But who doesn't love stew at midnight! - 2/3/11

    Veges take a long time in the crock pot to cook so I nuc them first for about 5 minutes and put them in the pot before the meat. This way the celery,onion potato are nicely cooked in the end.Yummy - 1/15/11

    I have to give this a low score. Tasted rather bitter. What did I do wrong? I used stew meat, 3 red potatoes, peeled/chopped carrots, 1 can diced tomatoes, corn, onion. What about the spices? I threw in alot (cumin, thyme, sage, garlic powder, salt, bay leaf). Cooked 2hr in pressure cooker?? - 4/15/10

    I used ripe tomatoes that I needed to use up before they expired, and I also used chopped baby carrots cause the kids love them. I did find though that it needed lots of seasoning. I ended up adding a package of Beef Stew Mix to help with flavor and thickness. Over all, very good, and easy to make! - 10/27/09
