Ingredients

    2 pounds chicken, without skin or bone
    2 cups carrots, chopped
    4 cups potatoes, chopped
    1 cup celery, chopped
    1 onion, chopped
    8 oz mushrooms
    1 tsp each garlic powder, thyme, oregano, marjoram, basil, bay leaf, black pepper
    4 cups water with 1 tsp lemon juice added

Directions

Chop chicken, carrots, potatoes, celery, and onion and put them in the slow cooker.
Pour the mushrooms on top.
Sprinkle on the seasonings, pour in the water and lemon juice, and put the lid on cooker.
Let cook on high for 4 hours, or on low for the day.
Dinner is ready when you walk in the door.

    This is a great recipe. I used chicken broth for the water, left off the celery since hubby doesn't like it. I also added chopped onions and used real garlic instead of the powder. What makes this recipe great is that you and add or take away ingrediants you don't like. - 5/22/09

    This is a good basic recipe. Just wipe a bit of oil in a pan and saute the chicken, onion and celery first(can do the night before and refrigerate the whole thing until ready to add to crock). I'll bring out the flavor. - 6/22/08

    I used 2 cans diced italian tomatoes and 2 cups low sodiup chicken broth along with 1/2 tspn.red pepper flakes.I'm sure a can of low sodiup mexican corn would be a nice addition.....Chef Jim - 6/22/08

    to add more flavor you could add 4 chicken bouillon cubes to the 4 cups of water or you could use chicken broth in place of the water or you could even use fat free cream of chicken , mushroom , or celery soup. - 5/22/09

    This stew totally rocks! I made it with a few more veggies (onions and mushrooms), added some chicken broth (half broth, half water), and had to change up some of the spices/herbs for what I had on hand (used rosemary instead of basil, oregano and marjoram, more garlic powder, andfajita seasoning). - 7/1/10

    Made this today. I put all into crockpot and added tomato base chicken boullion. Let it cook up and then took some vegies out and blended the rest for a "sauce" for coucous. It was great!! will try different vegies for the next time. Will make again!!!! - 12/4/08

    This is a great basic recipe that can easily be adjusted to each persons tastes and needs. I actually had this on the stove this morning before coming into SP. I haven't decided yet which direction to take it. Do we want a thick and creamy stew today? Sweet and sour? I agree with BAYYY and saute 1st - 6/22/08

    As with any recipe, if it is too bland add your spices, the ones that you like for italian add italian seasoning; for regular add poultry seasoning; for spice red pepper or pepper flakes; it is a basic recipe that you can do a lot with. - 12/17/11

    I make something similar, but instead of water, I use low sodium chicken broth (such as Swanson). I also use different seasonings, because we don't like much seasnoning in our food. This is a matter of one's one taste on the seasonings to use. sahaus49 - 6/22/08

    This was a quick and easy recipe to throw together. I added 1 tsp of salt and 2 cups of chicken broth with 2 cups of water instead of just all water. But for people who are on a low sodium diet (we have a family member) this is a great way to enjoy a winter favorite. - 10/12/07

    I make something similar and have added half water half lite coconut milk with some extra freshly chopped chillies for extra spicyness. To give it a really good kick, add some minced ginger and garlic. - 10/14/08

    Smelled good, but had NO flavor at all. Recipe has no salt and potatoes absorb all the flavor from the other veggies. I added 1/2 tsp salt and that was still no where near enough. Kids didn't like it either. (Although I would cooked with salt. May try again.) - 4/17/07

    We need bones to develop the broth flavor. Try using bone-in thighs, skinning & defatting them, then take the chicken out after it's cooked and de-bone; roughly chop the chicken and return it to the stew to briefly reheat on high. Yummy! - 10/15/08

    Nice start ... I increased the spices except for the pepper, increased the veggies by 2x and added 2x the lemon juice. The chicken comes out nice and tender. It isn't really "stew" like at all. I just served it as chicken with a side of the veggies. Next time I would thicken the liquid to make stew. - 1/11/10

    Yummy! I substituted organic chicken stock for the water, and then thickened the juice with a roux of butter and flour. After making the roux, I mixed the juice from the stew into the roux and cooked until bubbly and thickened. Then poured the thickened sauce over the chicken and veggies. Yumm! - 12/5/08

    I too used chicken broth instead of the water. I also took out the mushrooms (personal taste) and added a small bag of frozen peas. My husband and I will have enough for several meals. - 11/1/08

    I agree with Debra, it is a very nice base to work from. I made this dish as was for people that I did not know very well. If they had diet restrictions ...this was perfect.     I am thinking because I used frozen vegetables, this was way too watery for me so I added several tbsp of flour to get to a stew consistency. I also added 1 tsp of onion powder and salt to taste. Overall it was good. - 12/16/20
