Introduction

This is the way my mother makes it and we love it! You can use Butternut squash instead of acorn squash. I also use unsalted butter instead of Smart Balance from time to time. Ingredients

    1 acorn squash
    2 tsp granulated dark brown sugar
    1 tbsp Smart Balance Light buttery spread

Directions

Cut the acorn squash in half and remove the seeds. Place squash cut side down in a baking dish or cast iron skillet. Put enough water on the bottom of the pan to come up about 1/2 inch on the squash. Bake for about 1 hour at 350 degrees or until you can poke through the squash easily with a fork. Add a little water if needed throughout the cooking process so the squash doesn't burn. Once the squash is cooked, remove baking dish with squash from oven. Carefully turn the squash over. Add half of the Smart Balance to each half of the squash and 1 tsp of brown sugar to each half of the squash. Return to the oven for about 5 or 10 minutes until the Smart Balance and brown sugar are melted. Remove from the oven and serve.

    Did you know you can poke holes in the squash and microwave it a few minutes to soften it. Then it is easier to cut in half to scoop out and add the butter or light spread and the brown sugar. Cinnamon is also a great addition.

    If you are not sure if you like acorn squash you HAVE to make this recipe. It was amazing! Simple, easy and delicious. The brown sugar turns into a thin candy like shell on the squash. My non-veggie loving husband ate every bite. - 10/29/08

    This is the best way to eat most winter squash. Adding a little cinnamon, nutmeg, allspice or pumpkin pie spice makes this super yummy. Also a dollop of fat free whipped topping seems like you're having a warm comforting dessert! - 10/1/12

    I picked up some acorn squash for the first time hoping to find a good recipe for it. This sounded just like what I do to my baked sweet potatoes, so I thought I'd give it a try. My boyfriend and I had this as a "dessert" and it was perfect. Great recipe! - 11/12/09

    I have made this before too and we all love it at my house :)

    I usually bake it cut side up and have used light maple syrup in place of the brown sugar at times too.

    I have never had Acorn Squash before. So when I had a chance to get some from the Food Pantry, I went for it. I found your recipe and WOW!     My variation is to use sugar free pancake syrup and a few chopped walnuts instead of the Smart Balance and brown sugar. Hubby also likes raisins in his and has asked for this side for Thanksgiving. He never liked acorn squash until I started fixing it for him this way. This changes make it a 5 star! - 11/8/11

    I filled an 8X8 pan with the Acorn squash cut into chunks! I used cinnamon/sugar mixture on top of the squash - made my kitchen smell like baked apples!...served alone or with Vanilla Yogurt and Granola! (Vanilla Ice Cream works too : ) - 6/7/10

    My Mom always made it like that. I prefer to peel the squash and boil it like potatoes and then mashing them adding a little brown sugar and I can't believe its not butter and mixing it all up. Hard part is peeling the squash. But it is delicious. - 11/4/08
