Number of Servings: 10

Ingredients

    1 15-19 oz can chickpeas, drained
    1 small onion, chopped
    2 cloves of garlic, chopped
    1 tablespoons of fresh parsley, chopped
    1/4 cup of fresh spinach, chopped
    3 tablespoons all purpose flour
    1 teaspoon coriander
    1 teaspoon cumin
    1/2 teaspoon baking powder
    salt and pepper
    2 tablespoons olive oil

Directions

Drizzle olive oil evenly in shallow baking dish. Preheat oven to 350 - 400.

While oven is preheating, mash chickpeas with mortar and pestle or in food processor. Add onions and garlic and blend.

Add remaining ingredients to make a thick paste-like consistency.

Shape into ping pong size balls and place in preheated baking dish. Bake for 15-20 minutes, turning halfway through cooking.

    This was very good! I shaped them into hamburger sized patties and used a generous amount of cooking spray instead of olive oil (and doubled the cooking time). Kids loved them. Will definitely be making again. Thanks for the recipe! - 6/7/10

    I made my owwn chick peas so it needed a little more salt. I will be making this again. As a vegetarian it will really be an asset to my diet!! Tasted yummy and very filling, next time I may add some Parmesan cheese! - 1/27/10

    Just made these tonight & they are amazing! I actually used 2 cans of 15 oz beans and made larger size falafel, I think we came out with 12 large falafes. The rest will be frozen or eaten this week. Spices were spot on, I'd recommend eating w/ http://allrecipes.com/Recipe/Tzatziki-Sauc

    its a little bit different from the egyptian falafel recipe,and i will definitely try it as i love falafel and the recipe i know can just be deep fried ,so i will try yours it sound delicious.thank you for the recipe - 1/3/10
