Yet another "working with what we've got in the house" recipe...

There are 7 one cup servings here; my hubbie and I each had 2 cups as a serving, with 3 left over.

Ingredients

    Land O Lakes, Salted Butter, 1 Tbsp
    white flour, 1 tbsp
    Milk, 2%, 2 cup
    Yellow Sweet Corn, Frozen, 2 cup kernels
    Potato, raw, 1 cup diced
    Chicken Broth, .25 cup
    Chicken Breast, no skin, 6.9 ounces, chunked up
    Chicken Broth, 2 cup
    Onions, raw, .25 cup, chopped (I actually used dry onion flakes and rehydrated them in the .25 cup broth, didn't have onion in the house)
    salt, pepper, thyme

Directions

Ok. While the butter was melting, I let the onion soak up the 1/4 cup chicken broth and added them to the pan after about 10 minutes. In a seperate pan, I quick sauteed the chicken with salt, pepper and thyme (non stick pan, little 0-calorie spray). When the onions were happy in the butter I stirred in the flour until it was smooth. Then, added the corn, potatoes and 2 cups chicken broth. When the chicken was done, I threw it all in. I brought it all up to a boil, lowered it to a simmer, and let it go for 20 minutes - covered. I added the milk, brought it back up to a boil, and it was good to go. I stirred fairly often to make sure nothing was stuck to the bottom of the pan. Added just a bit of salt and pepper when it was served.

    This was delicious! I added a few things: some celery, carrots, and sauteed them before adding to the pot. I also put in a bit of cornstarch and cold water to thicken the broth a bit. But, this was fabulous! I loved it! - 3/21/10

    Had I had those things in the house at the time, I would have added them, too, ha ha ha!!! I tried to make a meal with teh little we had in teh house. It was like "Dinner Impossible". Thanks so much for writing. Glad you enjoyed the recipe!

    Incredible!
    Until now I had not had Chicken Corn Chowder, but my husband had. In an effort to try to find foods I can make for him I tried this recipe. We both like it. He requested more potatoes in it, but liked it this way too. I did use an arrowroot slurry to thicken it just a bit. Turned out wonderful. Than - 11/18/14
