Introduction

This is my go-to breakfast. It can be made entirely in the microwave, from ingredients that don't need to be pre-cooked (a must for me since I'm a student with no access to an oven!) You can substitute pre-packaged egg whites instead of separating them out from the egg if you like, and you can also switch out all of the other ingredients to things more to your taste (for example, I sometimes chop up a mini Babybel light cheese or a light Swiss Laughing Cow cheese in place of the shredded cheese). Ingredients

    Egg whites, separated out from 3 large eggs
    1 tablespoon shredded mozzarella cheese
    1 oz. baby spinach leaves
    (Could add additional vegetables, or meat, as desired)

Directions

Take the three egg whites and place them in a bowl. Add the cheese and spinach (and anything else you want, although be aware that will change the nutrition value). Mix it all together with a fork. Place in microwave. Heat for 2-3 minutes (depending on the strength of your microwave). Let cool 30 seconds - 1 minute. Enjoy! (Serves one.)

    It's 37C here today & I had to find some healthy meals to cook that wouldn't heat up my kitchen anymore than it already is. Thanks for posting this. It was great. I changed the veggies by putting a cup of a variety of peppers and mushrooms in, & adding some fresh herbs, no cheese. - 7/13/12

    Wait until eggs/spinach are nearly cooked, then add cheese, to keep the creamy cheesy bites intact. I added 2 tbsp. of pico de gallo and enjoyed the look of my colorful as well as delicious breakfast! - 8/13/11
